Bottle at home in Hackney - picked up from the brewery. Vintage 2016. Pours clear gold with a modest, foamy white head that settles into a cream. Nicely funky about, some tangerine. Light sweet flavour, bit more funk, citrus fruit, slight vanilla, oak, salt, grass, mild acidity. Light to medium bodied with massaging carbonation. Nicely balanced finish, bit of salty bite, more subtle citric twang, restrained funkiness. Excellent juice.

750 ml, batch 6, bottled 02/20. Pale golden body, with a small, slightly yellowish head. Aroma of barrel, citrus, stone fruits, flowers, moderate barnyard, some white wine, some straw, slight spices. Tastes quite similar, with more almond. Medium, slick mouthfeel, with an average carbonation. Finishes smooth, elegant, medium dry, wooden, fruity, a bit floral, a bit vinous. Very tasty! So fresh, with crisp fruits and a beautiful farmhouse character. Absolutely oustanding stuff considering the ABV! Score: 9 / 4 / 8 / 4 / 17

Blend #6. yellow hazy color, small white head. smells saison yeast, earthy, grassy, peppery, herbal, subtle funky, spices. nice to very nice smell. light body, soft carbonation. tastes earthy, vinous, white wine barrels, nutty, light spices, saisonish. finishes lightly dry and lightly bitter with notes of vinous notes, nuts and light tobacco. very nice one, very smooth. lovely, great for the low ABV.

Bottle pour at St. Gambrinus. Pours clear gold. Apricot, pear, funk, minerally, light grain, green apple. Light body. Excellent.

750ml bottle pours out golden topped with a small head. Nose is nice tart wet wheat some citrus zest notes and some spice. Taste is more of the nice tart funky notes some spice and a citrus floral kick.

750 ml bottle from the brewery, 8/22/21. Bottle dated 1/21. Unclear golden, mostly white head, rather foamy. Bright and a little funky. Wheat, spice, lemon, some pepper. Earth and grass. Drinks great. Tons of flavor in that Suarez oeuvre. As much as I picked up on my recent Suarez trip, I still wish I had more.

Bottle from Ryan: pours slightly hazy yellow with a white head. Aroma is slightly lemony, yeasty, hint of spice, biscuit. Taste is just the smallest but of tartness. Nice aftertaste. Quite good.

I tried the vintage first, which was probably a mistake, cause that was godlike. This one pours clears yellow, small white head, decent lacing. Aroma is hay lemon, funk, barnyard. Flavor is light tart, light plus funk. Light body. Excellent once again. These guys know what the fuck they are doing.

750mL bottle, pours a cloudy blonde with a small white head. Aroma brings out wild yeast, tart stone fruit skins and light vinous notes. Flavour is very funky, with lots of wild yeast and copious oak. Dry and wild, with a complex mouthfeel. Excellent.
