Bottle thanks to Ed. Pours a cloudy yellow gold with medium white head that diminishes quickly. The aroma is strong funk, cheese, oak, floral. Medium body, strong oak, funk, juicy, light dry finish, very nice.

750mL bottled December 2016, drunk 3/17/17 at Haymaker.
Another strong appearance, with a big white head showing moderate to strong retention atop a straw-golden body with light copper hues and a bit of haze.
Similar to Slow Bustle, but with a much more aromatic and elegant Brett character that adds juicy lime, light leather and other fruit notes. The same Hill Farmstead-like minerality, light lactic character and just a wonderful range of grain notes behind it all adding wheat and other cereal-like notes to the delicate honey from the pils malt. No alcohol or flaw.
In the mouth it’s elegant and full of a solid honey-like malt character that provides ample texture as tight carbonation carries the fruity and lightly tart Brett notes on to the finish. Free from the twangy/punchy character of slow bustle, this one alternates between long Brett fruitiness and tartness and delicate honey and grain. Clean, crisp, with a fresh house character. Fantastic!

Pours clear straw into a tulip. Bright white head with good retention recedes leaving spider lacing. Funky lemon aromas. Medium bodied but sharp with dough and biscuit upfront turning to tart lemon chiffon before the lasting bitter earth finish.
