We freeze raw juice from Winesap and Goldrush, allow the juice to slowly thaw, and then pull the concentrate. Both apples are fermented separately with a champagne yeast. The juice is allowed to ferment to dry, resulting in 10% ABV and 0.1% residual sugar.

The cider matures on its lees for over 10 months. Each month the lees are stirred back into suspension, allowing it to settle again and again.

Hierophant is inspired by ice ciders and big, bold red wines. Instead of the sweetness you would expect from ice ciders, Hierophant showcase the tannins, the complexity of these apples.

The cider is still, dry and tannic like you wouldn't believe. It is rich and full-bodied, filled with tropical notes from Gold Rush to offset the bold tannins from Winesap.

Can be served chilled or at room temperature, both yielding a unique experience.

Bottle at Blue Bee, pours a clear blonde, no head. Nose brings out bone dry apples, with some skins - this doesn't smell like an ice cider. Flavour confirms the nose, with dry apples, champagne-like yeast and alcohol. Never had an ice cider that was fermented out to total dryness. Bone dry and lacking anything that would indicate an ice cider, despite the method being the same. Interesting.

On tap at the brewery. Pours a clear gold with no head. The aroma is booze and oak. Medium body, very dry, oak, apple, boozy finish, good.

Sampler/flight pour at Blue Bee. Clear golden yellow. Aromas of apples, honey, white wine. Tastes of apples, white wine. Light body with a dry finish.
