Cantillon Cuvée Saint Gilloise is a two year old lambic that is dry-hopped and bottled with a small amount of sugar-liquor to begin refermentation in the bottle. The dry-hopping happens in a stainless steal tank prior to bottling. It is bottled yearly in 75cl bottles, but has been available in 37.5cl on at least one occasion in 2010 and on tap at various locations. Cuvée Saint Gilloise is the successor to Cuvée des Champions and generally thought to be of the same line of lambics. The name and color scheme for the labeling is derived from the Royale Union Saint-Gilloise, a Belgian football club originally located in the municipality of Saint-Gilles, in Brussels near Cantillon. In 2013, Cantillon made a special bottling of Saint Gilloise in both 1.5L and 3L bottles for people who owned or purchased season tickets for the 2013-2014 season. Saint Gilloise is widely believed to be dry-hopped with Hallertau hops however Jean Van Roy confirmed that the hop varieties change based on availability and as they have sourced hops from different providers

Nice fizzy-creamy mediumlasting head, hazy light orangy color. Aroma is slightly dry sour-ish fruity, sorrel, oak, hay, minerals, fruit stones, old rope, bark, dusty hops, sour berries, grass, hints of sour apricots. Taste is dry sour-ish fruity, soda powder, sorrel, sour berries, old rope, oak, grass, mild vinegar, citrus, fresh hops, sour apricots. Medium bitterness, dry sour-ish fruity mouthfeel. Nice.

On tap at Armsby Abbey with Paul and Josh. Mostly hazy deep orange color with a thin quickly fleeting bubbly white head. Earthy funky with hints of lemony tart. Pretty solid floral earthy hop aroma. Pretty nice.

Tap.Hazy golden colour with small head.Aroma is sour like vingar and acid mild dry to flavour of hay and yeast to mild livly finish.
