Cantillon Cuvée Saint Gilloise is a two year old lambic that is dry-hopped and bottled with a small amount of sugar-liquor to begin refermentation in the bottle. The dry-hopping happens in a stainless steal tank prior to bottling. It is bottled yearly in 75cl bottles, but has been available in 37.5cl on at least one occasion in 2010 and on tap at various locations.
Cuvée Saint Gilloise is the successor to Cuvée des Champions and generally thought to be of the same line of lambics. The name and color scheme for the labeling is derived from the Royale Union Saint-Gilloise, a Belgian football club originally located in the municipality of Saint-Gilles, in Brussels near Cantillon. In 2013, Cantillon made a special bottling of Saint Gilloise in both 1.5L and 3L bottles for people who owned or purchased season tickets for the 2013-2014 season.
Saint Gilloise is widely believed to be dry-hopped with Hallertau hops however Jean Van Roy confirmed that the hop varieties change based on availability and as they have sourced hops from different providers

Hazy, thin head. So hoppy. It’s hoppy on the nose but super hoppy on the palate. Very expressive. Holy shit that’s good. Not the buggiest or it would be a wild sour ipa. Beautiful.

Draft at Zwanze. Pours hazy orange golden with off-white foam. Aroma is herbal hops, lemon zest. Taste is highly sour (8/10) with a moderate herbal hop bitterness.

On tap at Four Winds Beach House. Pours murky dull gold with a white head. Musty wool, mildew, damp grassy hops on the nose. Flavour is full of milewy old furniture, a bit of manure, some crisp grassy hops, a touch of pepper. Moderate acidity. Excellent.

Opalescent golden coloir, minimal off-white lacing; aroma of sour apple (peel), lemony-lemon zesty, barnyard, leather, slight acetone and acetic acidy notes; taste of citric acid, sour apple, earthy-barnyard-like, some salty and hoppy bittery notes; really good gueuze

0.75l bottle many thanks to Lore. Slightly hazy golden body with a lasting white head. Aroma with notes of hay, lemon zest, pepper, sour apples and a bit of barnyard character. Taste of hay, cellar notes, pepper, lemon zest, salt, apples and grassy hops. Amazing how complex can such low ABV beer be. Wow!

Bottled 28.2.2024. Thin body, med carbo. Med-light sour, soft feeling, light tart with a hint of acetic. Lots of pleasant sweaty horse, barnyard, very funkin good. Hint of grapefruit, zestiness, some grass too. This is what these beers are sipposed to be.

Gulbrun tåkete med hvitt skum. Lukter svovel, blomster og stenfrukt. Fruktig, sursyrlig. Smaker eddik, stenfrukt, fyrstikk og grønt eple. Middels lang.
