A barrel fermented beer using fresh peaches from Baird Family Orchards. The Fantasia is firmly tart and hugely aromatic with a character not unlike Belgian fruit lambics. Minimum one year on oak before an extended bottle conditioning prior to release. Will cellar for several years, but best within three.

Sample from bottle. Light golden pour, ring of white head. Aroma and taste are mild sour notes, tart. Light fruity flavors pair well with the pucker. Nice, bright.

2017-03-25, bottle, Sergey's birthday party, 6% ABV, 7-3-8-4-16=38
Cloudy orange color with small to no head. Complex, fruity, peachy, and a bit lemony, with elegant acidity; much better than when I had it on tap. Excellent.
2016-06-01, draught at Alibi Room, Vancouver, 10th Anniversary party, 7-3-7-3-14=34
Cloudy, golden, and flat. Sour, definitively it has Lambic notes, more lemon, but also light cheese/yeast notes; some aroma of peach and yeast.
Nice, but I expected more.
