Dipping into the barrel aged beer we created with De La Senne over a year ago, comes a portion of Come What May that was barrel-aged for 6 additional months and includes a solid dry hop. This is more of a collab 'in spirit', as the brew day took place in 2017. The beer is finally ready now, and though Yvan couldn't make the trek this year -- it's delicious all the same.
The foundational beer is the same: a saison-like ale created without using saison yeast, achieved through several fermentations, selective brett inoculation, rustic grains, and lots of time. The update? We dry hopped this version with a combination of old world and 'new old world' hops.
What it smells like, what it tastes like: The additional time in the barrel expands an already interesting Brett induced funk and the inclusion of the dry-hop has added notes of lime zest, cut grass and a grapefruity west coast hop profile to the base beer.

Large can. Hazy bright gold , thin head. Funky brett nose, oak, grassy, herbal hops with citrus, lychee. Tart and funky, hay, citrus and a bit of tropical fruit. Refreshing, crisp, lovely.

Aroma: Brett, rustic, some flowers, hay.
Taste: along the same lines, nice carbonation, balanced Brett.
Overall: good one.

Bottle from the brewery. Hazy yellow pour, with a small white head. Aroma is very similar to the non DDH version. Bright, floral, but a bit more green. More freshly cut grass, more fresh hop cones, with a bit of pine mixed in with the citrus. Same medium bitterness, and dry finish, with light white pepper, and funky notes.
Dry and hoppy, just a bit of funk.

Bottle: Poured a golden color ale with a large white foamy e3had with good retention and good amount of lacing. Aroma of dry lady hops notes with some dry funky ester. Taste is a nice refreshing mix of peppery yeast notes with some dry leafy hops with some dry Brett notes with light cat litter notes. Body is about average with good carbonation. Solid saison with a great mix of Brett yeast strain and dry hoppy notes.

Hazy, blonde, thin head. Touch of what seems like lychee, antipodean hops, soft pale malts. Sweet, beautiful and refined.

Funk and some glue. Cloudy gold with a decent white head. A light tartness, bitter and some hay.

Bottle at Farmhouse Fest 2019, pours a cloudy yellow with a small white head. Aroma brings out floral dry hopping, with light tart stone fruits. Flavour is along the same lines, with dry hops, floral notes, and a little saison yeast. Dry and floral, with a medium bitterness. It's okay.

Bouteille 500ml, gracieuseté de msjpearson, Thanks Mike! Couleur jaune dorée voilée, mousse blanche onctueuse. Arôme de Brett, levure, chevalin, citron, pointe florale. Goût de Brett, houblon fruité, amertume moyenne-élevée toute en longueur, agrumes. Carbonatation élevée, corps moyen-dense.
