Barrel aged hoppy brett ale
Dipping into the barrel aged beer we created with De La Senne over a year ago, comes a portion of Come What May that was barrel-aged for 6 additional months and includes a solid dry hop. This is more of a collab 'in spirit', as the brew day took place in 2017. The beer is finally ready now, and though Yvan couldn't make the trek this year -- it's delicious all the same.
The foundational beer is the same: a saison-like ale created without using saison yeast, achieved through several fermentations, selective brett inoculation, rustic grains, and lots of time. The update? We dry hopped this version with a combination of old world and 'new old world' hops.
What it smells like, what it tastes like: The additional time in the barrel expands an already interesting Brett induced funk and the inclusion of the dry-hop has added notes of lime zest, cut grass and a grapefruity west coast hop profile to the base beer.

Tasting at Ash's
Cloudy pale greenish blond. Nice aroma, zesty and funky. Moderately acidic, moderately funky, astringent finish, with grapefruit peel and some horseblanket.
Very good.

500ml bottle (thx, Kory V.!) at Ash's with Jamey and Alex. Pours a hazy blonde with a white head. Aroma is very fruity, bretts, barrel notes, some sweetness. Similar taste with horse blanket notes. A bit woody and ashy. Good one, though.

(500ml bottle from the Hafis brewery shared) Pours pale straw gold with a moderate haze and average white head. Notes of slightly fruity pale malt with a bready/wheat undertone, touches of tree fruit in the malt/esters, lightly sweet and lightly tart, lots of drying wood, earth, lemon/lime zest with a little grapefruit, hops are giving a lot of fresh cut grass and flowers, a bit overly soapy actually, fair amount of barnyard funk. Finishes dry and moderately bitter due to wood and hops, lingering funk and lots of grassy floral vibe. Medium-bodied, smooth effervescent carbonation. Solid stuff, the added dry hopping provides some nice elements but I'd like it to be a little less heavy on the herbal/floral feel for improved drinkability.
