Bottle, 750 ml at Cantillon. Clear golden, small white head. Vinous, grapes, juicy, just incredible walnuts. Medium sourness, very smooth.
EB Quintessence Trip April 16-19. Life is indeed Belgian. Curry/walnut-notes are very dominant, almost vulgar, but I must confess I still love it. Mind blowing now but will be even better and definitely more elegant with some age.

18/IV/22 - 75cl bottle @ Cantillon Quintessence (Brussels), BB: n/a (2022-359)
Paired with amazing +24 months old Comté.
Clear blond beer, small to almost no head, a little stable, bit adhesive. Aroma: very musty, damp cellar, mouldy earthy impression, nutty, lovely! MF: ok carbon, medium body .Taste: citrus notes, earthy, oxidized, some orange peel, grapefruit, a gentle acidity, lovely complexity. Aftertaste: more acidic in the throat, lots of citrus, oxidized, clean acidity, lemon notes, a bitter touch in the finish. Lovely beer, great cheese pairing!

Lovely funk, massive walnuts and oxidized Vin Jaune. Sour and woody, but less dry then some Vin Jaune I’ve head, though it’s still very dry. Over medium sour. Great stuff, though maybe slightly on the sour side right now.

Bottle, served from a decanter at Bon Bon. Clear dark yellow pour. Simply amazing. Fantastic vinous and apricot notes give way to lemon zest, oak, and barnyard backbeats. Perfect body and mouthfeel.
