This is steinbier: a very old way of brewing beer. Back before metal vessels, wooden vats were used in the brewing process. As you can’t apply direct heat to wood, hot rocks were used to heat the wort. We gathered granite rocks from a local quarry & used local oak & cherry wood for fuel, using a technique learned from our forever friends at Scratch.
Composed of a grist build of 100% local grains from our friends at Riverbend Malt House of Asheville, we journeyed far into lager land. Utilizing the hot rocks to boil the wort, we achieved a mind-bending amount of caramelization and color.
Inspired by the gloriously malty dopplebock, this steinbock will ferment cool and condition cold for a long time. Precisely the way lagers are intended!

Can from Cloudwater online shop. Clear amber body with a thin head that fades. Steady carbonation. No lacing. Aroma of toffee, treacle and plum. Flavour of black pepper, caramel and red apple. Medium body with a slick texture. Soft fizz. This is tasty. It’s sweet but, despite the strength, it lacks the depth and complexity of the best Doppelbocks I’ve tasted.

Can from Cloudwater. Sweet caramel and dark chocolate aroma with a yoghurt streak. Opaque light chestnut. Frothy beige head is impressive at first before quickly fleeing. Medium sweet but tempered by a sour edge. Burnt caramel and nuts. Lingering bitternes into the finish but a fruity sourness remains. Medium bodied. Slick. A tad creamy. Flat carbonation. Long astringent finish. Enjoyable enough but too sweet to be sessionable. ABV is not obvious.

Keg at 73 Enid Street, 09/10/19. Golden amber with a decent off white head that stays for the show. Nose is malt forward, dried fruits, light booze tunes, breads. Taste comprises malt loaf, breads, mellow fruit eaters, straw, grains, light cereals. Medium bodied, fine massaging carbonation with a creamy feel and a good kiss of booze. Decent lager bier.

(Thanks, Gene travlr) Bottle. A- Mild smoke, peat. A- Gold color, clear liquid, off white head. T- Floral, mild peat, malty, caramel. P- Medium body, average texture, average carbonation, balanced finish. O- Lovely stuff. Not sure what kind of traditional ale it is but it has a nice smoked and floral aspect to it.
