Apple and bourbon nose, fig and airplane glue also present. Cloudy ochre, thin head. Apple and fig flavor, finishing with cherries. Very slight toast notes toward the end. Medium body, alcohol well concealed, but fizzy. Nice fruity complexity, and fairly drinkable. Wanting in breadiness when cold, but develops balance when warm.

On draft at Rattle N Hum NYC. Pours a clear pale copper with an off white head. Aroma of yeast and candy sugar. Apricots and orange zest hints in the flavor. Soft bitter finish.

Bottle shared at Beer Temple tasting. Pours clear amber with a tan head. Aroma of caramel, toffee, overripe fruits, raisins, figs. Flavor is heavy sweet and light bitter. Full bodied with soft carbonation.

Sample at the Decatur Craft Beer Fest. Dark gold, with a thin beige head. The aroma is honey, toasted malts, and coriander. The flavor is fairly bitter and sweetness. The palate is light to medium, sticky, syrupy, and smooth. Overall, this is a light, flavorful, and delicious beer.

22 oz. bottle from Market Basket. 2012 Vintage. Used my Allagash chalice. A turbid amber practically no head or retention. This is a Dubbel in every aspect. Carbonation seems a bit low. An aroma of malt, toffee, sweets and prunes. Flavor is slightly sweet and heavy with toffee and sugar. Dark fruits and some ABV. It may be a nicer if aged. Not really my thing.

2009 Vintage, bottled Jun 10 Pours a deep copper color with a decent sized beige head that quickly dissipates to a cap. Smells of brown sugar, caramel, dark cherries, raisins, and prunes with a nice melanoidin thing going on. The flavor follows the aroma quite well. Dark sugars and fruits with burnt raisin thing going on. Medium body with a light level of carbonation and a sweet slick mouthfeel. I was worried that I had sat on this one too long, but it all worked out. Nice brew that reminds me a bit of an aged barleywine or a dopplebock. Maybe now I should try a fresh one.

Deep amber to brown with lace. Nice, rich, chewy nose of caramel, chocolate, raisins. Rich, fruity malt, raisin, sweet orange and plum, caramel and chocolate, light spice from the yeast. A full, tasty beer, more than a dubbel, slightly less than a quad, but tasty. smooth, full body with smooth, soft carbonation. Earthy finish, some tangy fruit and a bit of bitterness. Good stuff. Quite authentic.

This is the 2012 batch for this brew. Right on target for a Belgian Ale. Taste, color and aroma are all reminiscent of a real Belgian abbey ale. Nice job and well done. Delicious!

Hazy red brown beer. Short lived light brown head. Toffee malt nose. Light palate, a little soft and semi dry. Dark toffee with some bubblegum and a little aniseed and spice. Finishes dry with surpressed bubblegum.
