Arthur (1922-2005) was our grandfather’s youngest brother; Hill Farmstead Brewery rests upon the land that was once home to him and his 13 siblings. In his honor, this Farmstead® ale is crafted from American malted barley, American and European hops, our distinctive farmhouse yeast and water from our well. Unfiltered and naturally carbonated, this is the ale that I dream to have shared with Arthur.

4 oz pour on draft at ChurchKey during the Hill Farmstead tap takeover on 4/1/2017. Not an April Fool’s Joke. Hazy yellow with off-white head. Aromas of funk, floral notes, herbs, citrus, tropical fruit. Tastes of tart notes, citrus, funk. Medium body with a dry finish.

Bottle, courtesy of luttonm, shared @King Arthur (Ciampino), thank you very much Matt! Pours cloudy yellow with a fine foam. Aroma of delicate brett, leather, barnyard, a vinous touch, white flowers, citrus, apricot. Flavour is powerful and complex but refined, amazing white wine notes, citrusy, high persistence. Medium to high body, fine carbonation. A real world class beer!

750ml bottles at Alex’s.
Fresh bottle (thx, stoned99!). Bottled on 2016-09-15. Pours a murky pale golden with a white head. Aroma is bretts, fermented veggies notes. Taste is sour, pretty similar to the aroma with some very slight ascorbic notes. Good stuff. 8-4-8-4-15=39
Aged bottle (thx, Jonathan G.!). Bottled on 2015-06-18. Aroma is more funky, acidic, some slight sweetness. Taste is more smooth and funk, no ascorbic and fermented veggies notes. 8-4-7-4-14=37.
I do prefer fresh bottle to the aged one.

Highly carbonated. Funky and spicy aroma like one of the best Orvals; but the flavor is less funky than the younger bottle, it’s more astringent, less dynamic.
I prefer the younger bottle.

Hazy blond color with green hue. The aroma is intense, spicy yeast, funky, with an earthy character, some sweat, almost manure. Dry but smooth mouthfeel; nice spicy flavor, a bit funky, with a nice character of citrus peel; moderate bitterness, but well balanced.

Draught. Creamy White good mostly lasting head. Yellow colour. Moderate malty and light hoppy and light yeasty aroma. Moderate bitter very sour flavor. Average moderate bitter finish. Oily palate. Disapointing.

At Hopishop’s B.U.M.B. tasting, one of Hill Farmstead’s better known beers, a farmhouse ale with bubbly, moussy, snow white, frothy, well-retaining head and clear yellow blonde robe with warmer ’old gold’ hue. Aroma of moldy lemon, soggy white bread, freshly whipped sour cream, sourdough, damp hay, something sulfuric not unlike cooked green cabbage, fresh valerian flowers, stale urine even, pickled gherkins. Fruity, estery onset, lots of gooseberry, hints of lime, cucumber, unripe melon and yellow plum, soft sourness, softish carbo, fluffy, supple mouthfeel, soft malt sweetish core, bit bready, bit soapy as well, tartness increasing in the finish, drying, crisp, spicy hop note with soft bittering effect, quenching. The sulfuric hint in the nose bothered me a little bit at first, but this is an interesting ’wild’ ale in many respects, complex and quenching with a very pleasant mouthfeel; still I have the feeling it is the very limited distribution of these beers that are responsible for the hype surrounding this brewery, rather than the quality of the beers themselves, though the ones I tasted so far were all tasty and interesting.
