Coton is our second anniversary ale. It is the same recipe as Papier, but created using the Solera method. We blended a portion of Papier that had been aging in oak barrels with this new batch of the same beer, adding an additional layer of complexity that will grow over time as we continue to age and blend with each anniversary, creating an older average age to the ale.

Poured from bottle thanks ClarkVV red brown with a nice beige head. Aromas of dark fruit caramel and molasses. Taste is caramel bomb with lingering alcohol burn. Whoa.

Bottle at Craig’s. Pours hazy brown, nose is roasted, chocolate, taste is rich, sweet, fruity, roasted.

750ml bottle courtesy of Thanasis. Dark red brown color with small beige head. Aroma is malty, caramel, fruity, dark fruits, pecorino cheese, wood. Sweet and light bitter taste, malty caramel and fruity, some vanilla notes, wood again. Medium oily body with soft carbonation. Alcohol is very well hidden.

Bottle of Cuir. Aroma is showing some slight oxidation with sherry notes. Lots of dark dried fruit including raisins and prunes. Some dark toffee and caramel notes with a bit of a smokey roast character. Hint of meaty soy sauce. Light alcohol note. Pours a somewhat murky, burnt amber with brown hues. Moderate sized, fairly thick, dark tan head that exhibits good retention as it recedes to a thin film in the center of the glass. Flavor is rather sweet with a lot of dark caramel and toffee notes. Lighter chocolate and burnt sugar with hints of roast and smoke. Moderate dark fruit notes of cherry and plums. Some raisin and prune notes as well. Faint meaty, soy sauce note; definitely lighter than the aroma. Medium light alcohol spice. Lingering dry fruit and dark caramel. Mouthfeel is full bodied with medium carbonation. Low astringency and medium low alcohol warmth. Overall, an alright beer but I can’t tell whether its going through a bit of a weird phase or totally turning for the worse with that meaty note. Its quite a different beer from the Fruet I recently had. Lots more fruit notes and signs of age.

Cuir 25% Bourbon, 2011 bottle Very hazy red a nice 3 finger head. Aroma is loaded with molasses and figs. Sweet taste. Huge oak presence and a heavy prune juice taste. Absolutely delicious

On tap on 06/06/2011 as Bruery Cuir. Somewhat cloudy dark amber body with a medium creamy tan head. Sweet vanilla, cherry, oak, and caramel aroma. Sweet oak, fruit, caramel, and light tart flavor. Medium full body with moderately low carbonation.

On draft at Pizzeria Paradiso Washington DC. Pours a fairly clear dark amber with an ecru head. Aroma of caramel and dark fruit. Sweet and viscous with flavors of caramel, plum, raisin and candy sugar. Sweet boozy finish. Wow.
