Coton is our second anniversary ale. It is the same recipe as Papier, but created using the Solera method. We blended a portion of Papier that had been aging in oak barrels with this new batch of the same beer, adding an additional layer of complexity that will grow over time as we continue to age and blend with each anniversary, creating an older average age to the ale.

On draft at Pizzeria Paradiso Washington DC. Pours a fairly clear dark amber with an ecru head. Aroma of caramel and dark fruit. Sweet and viscous with flavors of caramel, plum, raisin and candy sugar. Sweet boozy finish. Wow.

Bottle thanks to Tom. Pours a cloudy brown with paperthin beige head that diminishes to nothing. The aroma is a fruity malt and chocolate. Medium mouthfeel with a sweet roast and fruity malt and light oak. Easy to drink a very good old ale from The Bruery.

Original rating 1/4/13. Served on draft at Beer Run 12/18/12. Cuir vintage. Pours a clear red color with a medium sized creamy tan head. Good head retention. Aroma of toffee, caramel, whisky, vanilla, wood, citrus and berries. The taste is toffee, wood, vanilla, strawberries. Medium-full bodied, boozy. 7/4/6/3/12

Coton, bottle #00888, 4/29/14, Pours a hazy, almost murky, brown color with a thin ring of head that quickly fades. Aroma of toffee, raisin, citrus, wood, whiskey, caramel. The taste is tart stone fruit, citrus, toffee, caramel, vanilla, mild notes of whiskey, burnt wood. Medium-full bodied, low carbonation, moderate alcohol. 7/2/8/4/16

Bottle at Pikkulintu, Helsinki. Colour is reddish brown with small white head. Aromas and flavours are raisins, bitterness, sweetness, fruits and malts.

Dark ruby red, off white head, good colour
Aroma - Fruity malts, red berries, some booze
Taste - Rich red berry fruity malts, rich sweet fruity malts, some booze though, some sweet red wine
Palate - Very soft carb, full body, smooth texture. Finish great flavour but a tad too boozy
Overall - Another excellent beer...but it’s a getting too boozy though. Still a 4.0

75cl bottle as a birthday present from Kermis and shared with Kermis. Thin white head. dark amber pour. Sweet with lot of raisins. Awesome brew!

Bottle (Cuir version): Poured a dark brown color ale with a medium size foamy head with medium retention and some light lacing. Aroma of alcohol ester are pretty strong with some light vanilla notes and some toffee and sweet caramel notes. Taste is also dominated by quite strong bourbon notes with some sweet toffee and very sweet caramel malt notes. Body is quite full with medium carbonation and too much alcohol was apparent. The idea behind this beer is great but the execution is less then perfect. Even after two year aging the beer is still way too hot and lacking attenuation.

Bottle, 75cl, at RBNAG-11. Unclear, brown in color and topped by a small, off-white head. Fruity nose with caramel and dried fruits. Hints of alcohol when taking a deep sniff. Both fresh and dried fruits in the flavor, caramel maltyness and some warming alcohol. Full-bodied and quite effervescent. Sure a tasteful and pleasant one. 111015
