75% Ale, 25% Ale Aged in Bourbon Barrels
Coton is our second anniversary ale. It is the same recipe as Papier, but created using the Solera method. We blended a portion of Papier that had been aging in oak barrels with this new batch of the same beer, adding an additional layer of complexity that will grow over time as we continue to age and blend with each anniversary, creating an older average age to the ale.

31st October 2009 Post Borefts I Invasion of Fonefan and Charlottes room tasting! βPapierβ version. Hazy brown beer. Softish palate. Sweet spicy toffee - caramel malt. A little fruit in a warming finish.

A 2009 bottle as 'Papier'. I've never understood why Papier is aliased to Coton when Coton came first - oh well! Almost clear very dark brown beer, short lived tan bubbles. Nose is of dark bourbon barrel. Palate is pretty light and comes with reasonable fine carbonation. For 14.5%, the dark malts are fairly thin. A little mellow dark chocolate. Big warming Bourbon. Spicy too. Touch of dark fruits. Smooth warming finish leaves a spicy linger. Hmm. Any sweetness seems to have gone, maybe it's fermented out because even after 10 years this one is showing every bit of it's 14.5%. If you have one of these, I reckon you could continue to age it for many years to come.

Bottle shared at my 30:th birthday tasting on May 5 (30 Γ₯r av Surt). Courtesy of rlgk. Pours dark reddish brown with a rather small brownish white head that quickly dissipates without leaving any trace. Smell is sweet with plums, raisins, burnt caramel, dark bread, toffee, burnt sugar, wood, vanilla and ripe dark grapes. Taste is very sweet with prunes, alcohol, raisins, burnt caramel, lemon zest, orange peal, dark sweet bread, overripe grapes and golden syrup. Mouthfeel is sticky sweet, very tiny tart, boozy and medium to full bodied. Finish is sweet and tiny bitter with orange zest, ripe grapes, alcohol, port wine and grass.

Bottle at RBNAG-11. Dark amber colour with a beige head. Aroma is alcohol, apple, caramel. Flavour is alcohol, apple, malt, dried fruits, caramel, candis sugar. Full body. Nice beer.

Pours dark red with a large foamy white head. Complex aroma of malts, vanilla, oak, alcohol, syrup, sugar, caramel, toffee and sherry notes. Taste is very sweet with notes of syrup, sugar, malts and some alcohol notes. Finish is strong and long lasting with red wine notes. Alcohol burns through a bit too much. A bit too sweet for my taste, but otherwise quite well balanced and complex old ale.

Aroma has dark fruits, oaky notes, some nuts and red wine. Also some bourbon and vanilla. Flavour is rather strong amd somewhat sweet on oaky and whisky notes. Also some vanilla, bilberries, stinging whisky-like alcohol and hints of toffee typical to old belgian ales. Sticky stuff.
The removal of vax was rather hard.

Keg at Brouwerij Lane with Seth. Part of a five barley wine tasting. Character smacks of brown sugar throughout, with notes of tangy fruits and a bit of booze. Pretty nice, especially for a big boy.

Bottled. Cloudy dark brown, no head. Bourbon and caramel aroma. Sweet and full bodied with soft mouthfeel. Caramelly and vinous with some white pepper and some chocolate sauce. Very elegant, well except for that chocolate sauce.

Bottle @ Skjold Burne tasting. Pours slightly hazy dark brown with a small offwhite head. Aroma of malt, caramel, sherry, port, dark fruit. Taste is rather sweet, still rather complex tho, with malt, caramel, brown sugar, port, dark fruit, sherry, spices, booze. Full body, low carbonation. 250112
