This beer began with Boris, our much-loved Bourbon-barrel-aged Russian Imperial Stout. We always knew it would stand up to "big coffee" and so we set about blending different varieties until we settled on a particular Colombian roast from our good friends at Timbertrain. We then used Boris to make a huge batch of cold brew and the result is Boris Arabica, a lovely marriage of richness and complexity highlighting the coffee within layers of chocolate, peat smoke, oak, vanilla, and dark malts.

Poured from 473mL can (canned 01/19/2024). Black with small beige head. I like Boris, but I think it's just that they're using shitty coffee... some green pepper and feint chocolate, weird sweetness, but very unelegant. Meh.

Pours black with small tan head. Aroma heavy on the espresso; some peat detectable as well. Flavour also has a lot of espresso, dark chocolate, a good amount of bourbon. Maybe some dark red wine notes. The mouthfeel is smooth. Not elegant, but quite enjoyable.

2015 bottle. The aroma is a very nice black coffee, dark molasses, dark chocolate, but also an odd vegetable smell like unroasted coffee beans. Has a big foamy yeasty brown head and a very black body with hints of brown. Flavour is strong unroasted coffee beans, charred barley, roasted oak. Mouthfeel is full enough though missing dryness which is odd in a beer like this. It's very fine, heavy on the coffee but oddly vegetal at the same time. A more roasted approach might work better.

Bouteille 750ml, gracieuseté de BeerManCam lors du CanBIF Fall 2017, Thanks Cameron! Couleur noire opaque, mousse moka abondante. Arôme de vin rouge, boisé, bran de scie, grains de café. Goût boisé, café trop infusé, acidité moyenne-faible, âcre, harsh. Carbonatation très élevée, corps moyen-faible.

Draught at the brewery
Black color. Strong coffee aroma, a bit earthy. Dry mouthfeel, hence the alcohol is too evident; roasted malts, ashes, coffee, high acidity, some green peppers. Boozy. A lot of things thrown together here, chaotically.
Very mediocre.

Pour from the bottle at the brewery shared with Alex and Josh. Pours an almost black with a beige head. Aroma is coffee and some green peppers, maybe some chocolate notes. Taste is similar with espresso and roasted malt notes. Definitely Arabica-ish as it's quite sour. Not enough body in this. Very dry. An ok.

Bottle share. Dark brown pour with a thin brown head. Smells rich with coffee and roast, a little green pepper and ash. Tastes of roast and ash, some dry coffee. Lingering bitters.

Bottle share. Dark near black pour, small beige head. Bitter, smoky aroma carries over to taste, earthy, raisins, chocolate. Bitter finish lasts.

750ml bottle pours out dark brown topped with a tan. Nose is light funky sour notes roast malts some Brett and barrel. Taste is more of the light Brett notes roast malts some barrel.

Bottle - Boozy coffee and barrel notes. Deep brown with a small beige head. Bourbon and woody notes with a touch of green pepper and coffee. A bit disjointed.
