This Wild IPA is fermented with a yeast called Saccharomyces “brux” trois, which imparts an enticing tropical fruit aroma that complements its fruit-forward hop profile. Recently out of the experimental stage, El Dorado and Azacca hops are key to the overall bouquet of the fruity and melon character of this Wild IPA.

Cloudy orange pour, huge, pillowy, white head. Aroma is loaded with tropical fruit, melons, hints of funk, and some ripe hop cones. Mouth feel and carb are spot on, and this is quite refreshing, even thought it’s quite bitter. Finish has a hunch more tropical fruit, but the melon faces and here comes a boat load of citrus oil, and zest, but the light funk is completely gone. Good, not great. A little too all over the place.

A little off but not bad. Some citrus bretta and some passion fruit. Pours golden with ok head. Tangy with slight bitterness. Tap at CRAFT

Decent bright white head, slight fog on the yellow and small bubbles, looks well made at least. Citrus aroma is huge, all your favourite flavours - pear, peach, pineapple, pamplemousse, wet and juicy, it's becoming industry standard style aroma here. Wet mandarin orange, forgot that one too. Flavour is big wet orange, some pineapple, pulled back by a kind of bitter orange rind finish. A bit different as it's not as hugely sweet as some IPA's, a bit of fruit juice in here with extra skin parts, but really we're splitting IPA hairs here, it's all right. Just all right.

Poured from 650mL (stamped 16 M 28). Cloudy golden orange with off white head. Herbal vegetable, mild wild yeast, light citrus and pine hops, hint of nuts.

Bouteille de 650 ml du Canada Craft Club. Olfactif plutôt fruité avec des notes de fruits tropicaux, de la mangue, du poivre et une touche de terre. Les levures sauvages sont plutôt en sourdine. Belle complexité, puissance moyenne. Le visuel est doré tirant sur l’ambré avec une énorme mousse qui persiste de longues minutes. Les notes terreuses dominent l’entrée de bouche et persistent tout au long du processus. Le fruité est quand même présent mais beaucoup plus discret qu’en olfactif. L’équilibre houblons /levure est intéressant. Nous n’avons pas affaire à une acidité caractéristique d’une levure brett, mais plutôt à une levure au côté très terreux. Intéressant produit. Pas du tout dans les normes des IPA Américaines traditionnelles.

On tap at Alibi with Ash. Pours a hazy golden with a white head. Aroms is weak with fruity and some wild yesats notes. Taste is much stronger with fruity, floral and herbal bitterness. Quite pleasant.

Hazy, big head. Light amber. The sacc trois pops in the nose, along with a herbal hop nose. Quite fizzy, fruity hop, again a strong yeastiness, touches of berries. Not as complex as I might like, though.

22 oz. bottle, pours a cloudy opaque with a large white head. Aroma brings out some dirty wild yeast, light piney hops, and earthy notes. Flavour is well-balanced between earthy and piney hops, and lightly funky yeast. A bit dirty and sharp, but it works pretty well.

Tasting at Ferris’
Cloudy golden color, small head. Funky aroma, a bit chemical. Lean mouthfeel, a lot of funky flavors, some juicy malt, but also too much yeast and some vegetable bitterness.
Wild IPA is not a great idea, this beer is drinkable, but dirty.
