Ciel de Nuit is a 7% abv dark sour saison that is described as follows:

Aged for 9 months in French oak barrels, this complex French Farmhouse-style beer has a rich and dark malt profile as well as spicy characteristics from a French Saison yeast strain. This beer’s sour character is the result of a secondary fermentation in barrels with a special blend of wild yeast and bacteria.

Tasting at Matt’s
Brown color, headless. Caramel aroma, strong butter, butterscotch. Middle body, caramel, more butter, cookies, moderate sourness.
Total mess, quite bad.

650mL bottle, pours a deep dark brown with a small beige head. Aroma brings out wood varnish, yeast, and weird souring bacteria. Flavour is quite harsh, with loads of wood varnish upfront, sour bacteria and Belgian yeast. Quite offensive, with a dry, tart, vinous finish. Nasty stuff.

Bottle - Tootsie roll and light malts. Cloudy Amber with a light beige head. Sweet, bitter, malty and tootsie caramel. Buttery notes throughout.
