The Quetsche Tilquin à l’ancienne is a spontaneous fermentation beer obtained from the fermentation of destoned fresh purple plums (Quetsche véritable d’Alsace, close to the Damson) in a blend of 1 and 2 years old lambics for a period of 4 months. Unfiltered and unpasteurized, it is re-fermented in the bottle for a minimum period of 3 months. The lambics used were fermented and matured in our own oak barrels at the blendery. They are made from worts brewed by Boon, Lindemans, Girardin and Cantillon.
The taste is slightly tart but also fruity and round which makes this Quetsche à l’ancienne may be more accessible for non-experts or less sophisticated palates. It also has a slight dryness from the skin of the plums. The nose perceives a plum brandy perfume.

Zapach w którym można doszukać się wędzonych, suszonych śliwek, z delikatną nutą pomarańczy, zapewne stąd też trochę bardziej intensywna barwa piwa - bursztynowa.
Smak przenosi nas w czas świąt Bożego Narodzenia, kompot z suszek czyli tak jak wspominałem wcześniej suszone śliwki i pomarańcze.

Dark orange, dense hazy body, with a small, creamy, white head.
Aroma is tart and sour, with barnyard, citrus, sour fruits, grapes, must, dough.
Taste is very tart, sour and dry and follows the nose, the plums are noticeable now, but only subtly.
Medium, slick mouthfeel, with an average carbonation.
Finishes sour, dry and finally with a long-lasting, subtle plum.
Great! While the taste is slightly too tart for my liking, still a really enjoyable, big, complex Lambic! Unfortunately the plums aren’t really distinct, but lots of other sour fruits instead.

Hazy appearance with a light pink hue. It’s tart and fruity. The sweetness of the plums balance out the sharpness well. Well rounded.

Sample at SBWF 2014. Pours a semi hazy copper with a small white head. Aroma of prune, figs and some funk. Tart taste of prune, leather and some dark fruit. Very enjoyable.

Draft @ Borefts 2014. Body is the delicious gueuze Tilquin of course, which goes very well with the fruity prunes. The beer has a good balance between the bretty and earthy notes of lambic and the fruity softness of the prunes. Very good.

The first plum lambic to my knowledge, with a lightly pinkish white, thin, stable head and a pinkish peach blonde colour with orange hue, hazy. Complex, estery and assertive lambic aroma of lemon, hay, sour yoghurt, unripe plums, raspberry, wine vinegar, old sherry, vanila, oak, tomato... ’Malse’ lambic taste, complex, lactic acidity and sharpish citric acidity, fresh, sherry-like with unripe fruit, woody and funky finish, very long, dry with some leafy hop bitterishness. Great fruit lambic, though the actual plums remain somewhat hidden - but in a beer this complex, that could not bother me at all.

Bottle at Borefts 2014. Cloudy pink orange. Some plums on aroma. Then good sour beer in mouth leading to an excellent sour finish sweet and sour plums run through it. Good solid. Not as good as the squared but good fruit led lambic. Good to excellent

Borefts. Hazy orange pink with almost no head. Massive funk, grains and sourness. Nice prunes on the nose and some in the taste but not that much. Some horse and barnyard and sour milk. Pretty good!

From 750ml bottle @ sbwf14. Deep amber, thin white head. Barnyard, ripe apples in aroma. Heavy stuff. Flavor has apples, some vinegar, funk, dried apricots. Very very dry. Apricots lingering.
