We brew this trippel with a Trappist yeast strain to hold true to the traditional style. The flavors are incredibly complex with notes of mild fruit that finish with just a bit of clove. Although this beer has a slightly higher ABV, you will find it finishes very smooth and dry on the palette. This makes for a perfect summer sipper.

12 ounce bottle into chalice, bottled on 5/6/2014. Pours moderately hazy/cloudy golden orange color with a 1 finger dense off white head with good retention, that reduces to a thin cap that lingers. Light spotty soapy lacing clings around the glass, with some light streaming carbonation. Aromas of apricot, orange, golden raisin, pear, apple, light banana, clove, pepper, biscuit, candi sugar, herbal, floral, and yeast earthiness. Very nice aromas with good balance and complexity of fruity/earthy yeast ester and bready malt sweetness; with good strength. Taste of apricot, orange, golden raisin, pear, apple, light banana, clove, biscuit, candi sugar, herbal, floral, light pepper, and yeast earthiness. Fair amount of earthy yeast spice on the finish; with lingering notes of apricot, golden raisin, pear, apple, light banana, clove, biscuit, candi sugar, herbal, light pepper, and yeast earthiness on the finish for a good bit. Very nice complexity and robustness of fruity/earthy yeast and bready malt sweetness; with a great malt/yeast balance and zero cloying sweetness after the finish. Light-medium carbonation and medium bodied; with a very smooth and fairly crisp/bready mouthfeel that is nice. Alcohol is well hidden with minimal warming present after the finish. Overall this is a very nice tripel style. All around good complexity and balance of fruity/earthy yeast and bready malt flavors; and very smooth to sip on for the ABV. A very enjoyable offering.

Bottle. Hazy gold with a white head. Aroma of oranges, apricots, honeyed dough, cloves. A bit sticky. Wow, heaps of cloves in the taste, not just at the end. Coriander and banana too - all a bit much. There’s some pleasant honeyed dough, citrus and apricot there too and the spices are less harsh as it warms.

Bottle @ Home. Pours hazy amber with a small offwhite head, loadws of small floaties. Aroma of sweet malt, bread, caramel, yeast, berries. Flavor is rather sweet with malt, caramel, bread, yeast, honey, red berries, lightl booze. Medium body, soft carbonation, light warming alcohol in the finish. 151213

Tap@Fermentoren - Fuzzy golden pour, with small dissipating white head. Sweet fruits in taste and aroma, sweet doughy yeasts, sweet malts, grassy, some slight clove in the finish. Bit sweet for my palate overall.

Bottle sample at a tasting at Yoav’s place. Thanks Yoav. Hazy golden with a bit of floaties. Aroma of cardboard, fruits and alcohol. Sweetish and fruity flavor with malt, cardboard and some alcohol. Medium-bodied.

Draft at Beer Temple. Pours hazy golden with an off white head. Aroma of malt, wort, citrus and herbs. Flavour is light moderate sweet and moderate bitter. Medium bodied with soft carbonation.

Bottle, Chester Beer & Wine. Murky bronze pour with a medium off white head and some sediment lurking. Nose was yeast, nuts, hops. Sweet hoppy flavour with a little spice, abv well masked. Not bad.

Total Wine, Fairfax bottle: Pours orange with a white long-lasting head. Aroma is yeast, banana, spice, and a bit of booze. Taste has a bit of the boozy bite to it. Somewhat sweet. Little bit of hops and spice. Malty backbone is nice. A bit too boozy for my tastes. Some afterburn.
