Funk Metal is an unfiltered, unpasteurized, naturally conditioned imperial stout fermented with farmhouse yeast, aged for months in oak barrels with wild yeast and souring bacteria, and then hand-blended with other barrel-aged beer to round out the palate. The finished beer retains aromas of chocolate and roast but takes on a distinct vinous character and sour complexity from extended aging and fermentation in oak barrels.

On tap at Borefts beer festival, de Molen, day two. Hazy dark pour. Smoky funk aroma. Sour cranberry that contrasted in a not too pleasant way with the malty stout.

Cask at Borefts. Murky maroon brown color, small tan head. Aroma of figs, coffee, chocolate. Taste is a nice balance between roasty and sour.

Cask at Borefts. Dark pour with a thin glass-hugging head. The sourness is present in the aroma which also dominates the flavour. There is a hint of chocolate and some citrus notes. The palate is excellent for a sour beer and lets you truly appreciate the flavour. Carbonation is low, which was welcome and enhanced the experience. ---Rated via Beer Buddy for iPhone

Sample at Borefts. Pours dark brown with a ring tan head. Aroma of barnyard funk, coffee, chocolate. Flavour is moderate sour, light sweet and bitter. Medium bodied with soft carbonation.

tap at de molen ... deep black ... thin tan head ... soft funk roast ... kight chocolate nose ... big roast big chocolttae ... too much brett for me.
