Funk Metal is an unfiltered, unpasteurized, naturally conditioned imperial stout fermented with farmhouse yeast, aged for months in oak barrels with wild yeast and souring bacteria, and then hand-blended with other barrel-aged beer to round out the palate. The finished beer retains aromas of chocolate and roast but takes on a distinct vinous character and sour complexity from extended aging and fermentation in oak barrels.

Draught @ 4th Borefts Beer Festival 2012, Brouwerij de Molen, Bodegraven, Netherlands.Clear dark brown colour with a small to average, frothy, good lacing, mostly diminishing, light beige head. Aroma is moderate malty, roasted, chocolate, coffee, sour, funky, wood. Flavour is moderate to heavy sweet, light to moderate acidic and moderate to heavy bitter with a long duration, tart, sour barrel, dark malts. Body is medium, texture is oily, carbonation is flat. Cask at Funk and Sour Fest. Pours a dark brown with small beige head that diminishes to nothing. Aroma is roasted malt booze and funk. Sweet malt and smoke with light funk and tart finish. Very good Sour ale from Jester King.

Borefts Beer Festival IV. Day 2. Opaque dark brown beer, tidy pale tan head. Palate is light and a little crisp. Semi dry. Mild dark malts well integrated with sour bretty flavours. Pleasantly sour - not overwhelming. Semi dry finish. One of the better sour dark beers around.

Brown black colour, beige head. Aroma of coffee, mocha, quite sour, roasted malts, soda and sour berries. Light sweet flavour, coffee, light sour. Finish sour berries and coffee.

Boreft Beer Festival 2012. Black with a small off-white head. Aroma has some funk, some red-wine oakiness, and some chocolate. Dry and tart fruity and roasted flavour with chocolate and red berries in particular

Draught @ Borefts 12. Opaque pitch black color, small off-white head that’s fully diminishing. Smell roasted malts, a light sourness, some chocolate and dirt. Taste malts, some sweetness, chocolate, spices, sourness. Decently balanced. Interesting beer.

On tap at Borefts 2012, Bodegraven. Pours dark, brown-black with a fine, beige cream head. Dusty cocoa nose, subtle funk notes. Light to medium sweet flavor, notes of dirt, more dusty chocolate, very mellow funk. Light to medium bodied with fine carbonation. Modest dark malt finish, some dry chocolate. Very OK stuff.

From tap at Borefts. Pours pitch black with a small tan head. Aroma is fruity, dark roasted malty and yeasty. Tart, fruity, brett and dark roasted malty. Citric, tar and ligering fruity into the finish.

Cask @ Borefts - so much better than the Farmhouse Black Metal - cask really works for this one - black with a smaller mocha head - pure sweet mocha nose, light roast, sweet malts, light sour berries - mellow nice sweeter mocha roast, chocolate combined with light vinegar, sour berries, light dark fruits, nice mellow acidity in the back - cask lessens the carb. which is quite good - very easy to drink - sessionable sour stout - great stuff people
