Funk Metal is an unfiltered, unpasteurized, naturally conditioned imperial stout fermented with farmhouse yeast, aged for months in oak barrels with wild yeast and souring bacteria, and then hand-blended with other barrel-aged beer to round out the palate. The finished beer retains aromas of chocolate and roast but takes on a distinct vinous character and sour complexity from extended aging and fermentation in oak barrels.

Draught at CBC. Creamy lightbrown good mostly deminishing head. Black colour. Heavy malty and hopy aroma. Moderate bitter flavor. Roast and sour notes. Long moderate bitter finish. Creamy palate.

Fat på CBC 2013. Smak och doft av torkad frukt, karamell, smörkola, malt, humle med toner av choklad och laktris. Stor syrlighet och sötma. En annorlunda stout, men gott var det.

Sample from tap, CBC 2013. Dark brown colour with a small, off-white head. Sweet and lightly roasted aroma with chocolate malts, tart, red berries and oak, Taste is light sour. Medium body, creamy texture. Tart finish with an almost acidic berries and red wine notes. Hints of cocoa powder. Interesting and complex.

Fat på CBC 2013. En sur stout eller mörk rödöl eller någonstans mitt emellan. Balsamvinäger, syrlig fruktig mörk choklad och espresso, körsbärskärnor, karamell, kola. Sött, syrligt, fylligt och rostat i bra balans. Riktigt gott!

Pours pitch black with a tiny head. Vinous and roasty aroma with notes of wood, tart ripe fruits and oak. Taste is sour, roasty and sticky with notes of wood, tart ripe fruits and licorice. Finish is vinous and sourish with some roastiness. Quite untypical and unique.

Draft. A black beer with a brown shine under a lazing tan head. The aroma has notes of roasted malt, soy sauce, and brettanomyces. The flavor is sweet with notes of roasted malt, bretttanomyces, and soy sauce.

Pours black and murky. Just a sliver of dark brown around the edges of the glass. Little head. Just a thin film of brown bubbles of various sizes, and even that disappeared fairly quickly. I’ve seen pictures of this beer with a lot more head, so I assume that my bottle is just a bit low on carbonation. I really don’t care about appearance nor expect perfect consistency from sours, so it doesn’t bother me at all. The aroma has lots of fruit and some underlying stout character. I’m getting a lot of blackberries and red wine. There’s a good dose of oak in there. Underneath that fruity sourness, there’s chocolate, a little caramel and mild roast. Very pleasant mix of chocolate and fruit. The flavors are well composed and seem much more intentional than probably any other sour stout that I’ve tried. Taste is similar to aroma. Primary flavors are chocolate, sour, tannic oak, blackberries and red wine. Fairly tart, particularly in the finish. Some cocoa sweetness, but the oak provides a drying tannic bite. Nice lingering red wine and chocolate aftertaste. Carbonation is relatively low, but that might just be my bottle, in part. Very good sour stout. Probably the best I’ve had. I haven’t been a big fan of many sour stouts, but this is an excellent beer. Jester King continues to impress.

Brewvival Trip Beer 110. Bottled at Brewvival. Pours a dark brown color with a thin creamy tan head. Decent head retention. Aroma of roasted malts, caramel, stone fruits, funk. The taste is chocolate, tart fruits, citrus, caramel. Medium bodied.

From cask @ Borefts 2012. This is a deep dark brown one, near no head so it looks kinda flat in the glass. Smells quite nice: It has clear sweet chocolate and some licorice, I also get a light woody aroma when nosing it. Perhaps also a bit of cold coffee in here? Anyway, smells quite nice. Oh, it's funky sour, yeah! Woody sour and sweet. It's definitely cask-flat on the carbonation and the mouthfeel is slick oily. I like how the chocolate dances with the red-sour berries in my mouth. That being said, it not an exceptional brew that I have to try again, but It's a nice little thing. 28.09.2012
