Funk Metal is an unfiltered, unpasteurized, naturally conditioned imperial stout fermented with farmhouse yeast, aged for months in oak barrels with wild yeast and souring bacteria, and then hand-blended with other barrel-aged beer to round out the palate. The finished beer retains aromas of chocolate and roast but takes on a distinct vinous character and sour complexity from extended aging and fermentation in oak barrels.

Near black with a medium head. Aroma had sour berries, roasted malt and lacto bacteria. Flavor was sour with sour berries, roasted malt, lacto and balsamic notes. Finished sour. Just right. What I’ve been waiting for. Lovely.

On tap at Beer Temple. Black colour, no head. Aroma of hard roasted malts, toffee, berries, tobacco, wine barrels. Flavour is sour, hard roasted malts, toffee, acid. Very acidic actually. Medium-bodied. A waste of good stout imo.

On tap @ Beer Temple during the 2nd Brett fest in A’dam, with joes, caesar, borrestein, TheJvd etc. Almost black color. Beige head. Aroma’s: hard roasted malts, a bit of soy sauce, but retronasal there a lot of sourness, with roast. Flavor is sour and lightly roasted bitter. Medium bodied. Meh, sour impies - not my cup of tea.

Draft @ CBC 2013. Pours a black color with a small tan head. Has a roasted sour tart woody aroma. Fruity sour tart woody caramel flavor. Has a roasted malty sour tart woody finish.

Bottle. Opaque black liquid with small tan head. Aroma of wood, vinegar, raw sugar, dark fruit, chocolate, apples, barnyard and lemon. Taste is dry and medium sour with notes of lemons, apples, wood, chocolate and vinegar. Medium bodied with low to medium carbonation. Nice stuff, sour and funky.

[5/4/13] Draught at Copenhagen Beer Celebration 2013. Black with a brown head. Aroma is kinda funky with some wood, some chocolate and fruits. Sour flavor with a bit of roastiness, coffee notes, sour cherries, barnyard, oak and lemony notes. Rounded-mouthfeel. Very good.

Sample at CBC 2013, Saturday. Black with a small tan head. Aroma and taste of roasted malt, funk, wood, some yeast, dried fruit and some vanilla. The finish was sour. An interesting and tasty one.

On tap at CBC, pours black with a small ring of tan head. Aroma of heavily roasted malt, moderate tartness, and some funky wild yeast. Flavour of tart roasted malt, funky wild yeast notes, and some dark dried fruits. An expert incorporation of wild yeast into Black Metal, creating another layer of complexity. Excellent stuff.
