Funk Metal is an unfiltered, unpasteurized, naturally conditioned imperial stout fermented with farmhouse yeast, aged for months in oak barrels with wild yeast and souring bacteria, and then hand-blended with other barrel-aged beer to round out the palate. The finished beer retains aromas of chocolate and roast but takes on a distinct vinous character and sour complexity from extended aging and fermentation in oak barrels.

Capped 750 from Bu11zeye. Pours a gusher. Pours dark brown black with a light tan head. Aroma is lightly sour/funky/earthy. Near full bodied. Flavor is moderately sour burnt malt. Finishes sour oaky bitter. Unique.

Awesome sour Stout. Brown black, looks like an Imperial Stout. Has a pronounced sourness. Chocolate and sour intermingle quite nicely. Awesome.

750ml bottle. Pours black with no head. Aroma is salty liquorice and lightly sour blackcurrant. Taste is salty and sour blackcurrant start. Strong sour finish with blackcurrant on the aftertaste.

Keg@CBC2013 Dark brown color, small beige head. Licorice, bretta, coffeish notes in the aroma. Medium-bodied, nice mouthfeel. Starts dark malty, lingering grapefruity bretta. Nice.

Bottle @ Aarhus tasting. Black with a small brown head. Aroma is sweet, roasted malt, sour fruit, brett and wood. Flavor is quite sweet, moderate bitter and moderate acidic. Dry, moderate bitter and light acidic. 171013

Bottle, 8.2%. Black with medium brown head. Aroma is roasted malts, sour, acetone and chocolate. Flavour is roasted malts, chocolate, sour, little acetone, little dry, little dark fruit, wood, little brett, medium sweet and a little bitter.

Bottle. Nice head with good duration. Color is black. Aroma and taste are sour malt, lactose acid, brett, roast malt, chocolate, coffee and hops. Weird with a sour stout, but still good.

Appearance: Brown colour with a tan head.
Aroma: Sour coffee, some roasted malt, yeast.
Body: Medium body, average carbonation.
Flavour: Dominated by a sour taste with a ghostly coffee lingering in the background.

(Draught at Beer Temple, Amsterdam, 25 July 2013) Black colour with brief, beige head. Malty, roasted, funky nose with coffee, chocolate, wild yeast and barnyard. Roasted, malty, tart taste with notes of balsamic vinegar, coffee, dark chocolate, oak wood, funky yeast and a dry, tart finish with a slightly roasty bitterness. Almost full body. Dry and sour. This really is quite different, possibly not loved by everyone, but in my opinion very tasty, surprisingly well balanced and quite lovely. And when Rage Against the Machine started coming out of the speakers ... perfection was close. Lovely beer!
