Funk Metal is an unfiltered, unpasteurized, naturally conditioned imperial stout fermented with farmhouse yeast, aged for months in oak barrels with wild yeast and souring bacteria, and then hand-blended with other barrel-aged beer to round out the palate. The finished beer retains aromas of chocolate and roast but takes on a distinct vinous character and sour complexity from extended aging and fermentation in oak barrels.

Bottle, 75cl. It pours a dark body, as black as can be, topped by a dense, finger-thick tan head leaving lacings. The aroma is funky and sourish, almost lambic-ish, with roasted malts and some licorice. Nice indeed, but sort of one dimensional. Sour, roasted flavor with dark dried fruits, licorice and some coffee notes. It’s full-bodied and soft on the palate, dry, and with a lasting roasted and sour finish with prunes and rum raisins. Starts a bit boring this one, but damn it’s fine one. 140808

A deep dark stout with a thin mocha head. In aroma, bitter chocolate malt with coffee grind, herbaceous character, floral hops, nice. In mouth, a nice mix of sour tartness over bitter chocolate, lactic acid, wood extract, nice. Bottle at Spinrsx tasting.

Bottle: Poured a pitch-black color ale with a large dark brown foamy head with light retention Aroma of sour tart notes with light roasted malt notes that are also perceptible. Taste is also dominated by tart and sour notes with light acidic notes and some light dry roasted malt with light vinous notes. Body is quite full for style with good carbonation and no apparent alcohol. Pretty enjoyable even though soured stout are not something I look for on a regular basis.

Bottle received in trade. Batch 1 (if there are more than one). Thank you Jeffrey (non-RB)! Big gusher! Pours murky black with a fizzy blackish mocha head that quickly dissipates without leving much trace I the glass. Smell is sour and tannic with roasted malts, bitter chocolate, red wine vinegar, moist wood, moist soil, hay, lemon juice, liquorice root, mushrooms, dark roast coffee, lemon zest and leather. Taste is sour, slightly malty and heavy tannic with roasted malts, lemon juice, red wine vinegar, bitter chocolate, liquorice root, Dark roast coffee, lemon zest, moist soil, leather, hay, barnyard, raisins, prunes, burnt wood and burnt caramel. Mouthfeel is round, tart, slightly dry and medium bodied. Finish is sour and tannic with roasted malts, raisins, bitter chocolate, burnt wood, dark roast coffee, hay, barnyard, lemon juice an red wine vinegar. Solid sour stout nicly balanced between the roast and the acidity.

Pours black , small grey foam Smells sour , yet complex . Funky ( heeeey, now i get the name ) and a bit of malts Taste is sour but balanced . Roasted malts ( bit chocolade undertone ) come very late , and not too intence . Good , well balanced beer , but not something to drink a whole lot of .

Got in a trade with cyde. 750 ml bottle into signature tulip glass; Batch 1, bottled in Fall 2012. Pours dense pitch black color with a 1 finger dense dark brown head with good retention, that reduces to a thin cap that lingers. Light spotty soapy lacing clings on the glass. Aromas of big sour cherry, cranberry, green apple, raisin, red wine, dark chocolate, roasted malt, cocoa, light char, toast, oak, clove, hay, straw, vinegar, musty funk, leather, and yeast earthiness. Damn nice aromas with good balance and complexity of dark/roasted malt, oak, and acidic yeast ester flavors; with good strength. Taste of big sour cherry, cranberry, green apple, raisin, red wine, dark chocolate, cocoa, roasted malt, light char, toast, oak, clove, hay, straw, vinegar, leather, musty funk, and yeast earthiness. Good amount of acidic sourness on the finish; with lingering notes of sour cherry, cranberry, green apple, raisin, dark chocolate, cocoa, roasted malt, light char, oak, clove, vinegar, straw, hay, musty funk, light leather, and yeast earthiness on the finish for a good bit. Fantastic complexity and balance of roasted malt, oak, and acidic yeast ester flavors; with a great balance of malt/acidity and zero cloying flavors after the finish. Medium carbonation and medium-full bodied; with a moderately creamy, slick, and lightly acidic/chalky mouthfeel that is nice. Alcohol is very well hidden with only a slight warming present after the finish. Overall this is an awesome sour imperial stout. All around great balance and complexity of roasted malt, oak, and lactic yeast flavors; and very smooth to sip on with the moderate acidity. A highly enjoyable offering.
