Funk Metal is an unfiltered, unpasteurized, naturally conditioned imperial stout fermented with farmhouse yeast, aged for months in oak barrels with wild yeast and souring bacteria, and then hand-blended with other barrel-aged beer to round out the palate. The finished beer retains aromas of chocolate and roast but takes on a distinct vinous character and sour complexity from extended aging and fermentation in oak barrels.

Tap@ CBC 2016. Pours near black with a thin white head. Vanilla, mild fruity tartness. Flavor has tart fruits, funk, vanilla notes. Mouthdrying finish, tart.

Bottle shared by Tony. Pours dark brown color with tan head. Aromas of roasted malt, dark fruit, and sour berries. Tart blackberry and roasted malt flavor with some cherry and dark fruits. Medium body with average carbonation.

Visuel : Couleur : brune très foncée. Apparence : quasi-opaque.
Arôme : Malt rôti, levures fruitées sûres (petits fruits sûrs) aux notes sauvages, notes chocolatées et boisées.
Goût : En entrée de bouche : Levures fruitées acides (cerises sûres, léger de raisins, traces de citron). Une dominante de malt rôti et léger de caramel est présente avec des notes boisées vineuses et de café.
En bouche : Corps : moyen. Effervescence : moyenne. Texture : légèrement huileuse. Finale : longue, composée d’une légère acidité de levures fruitées avec une petites amertume de rôti et de café.

Bottle - Nice soured roasty notes with a slight touch of Berry. Jet be Town with a nice brown head. Tart dark roast with a nice thin easy drinking finish. Great dark soured stout.

3 oz bottle pour at ChurchKey. 2013 vintage, not sure which batch. Black with light tan head. Aromas of funk, dark fruit, grapes, some vinegar. Tastes of red wine, vinegar, grapes, chocolate, funk. Medium body with a dry finish. Nice sour stout.

From tap. Black color with off white to beige head. Yeasty and roasted malty aroma, funky, chocolate, some coffee. Sweet, bitter and light acidic taste. Medium oily body with soft carbonation.
