Mont Des Cats is a trappist abbey in Northern France, a few kilometres from the Belgian border. They do not have a brewery in their monastery, so their beer cannot show the Authentic Trappist Product logo. But it doesn’t get much closer – they have their beer brewed by the monks of Chimay!

Developed independently to the Chimay range, the beer is a lovely copper colour. The link to Chimay is evident in the distinctive Chimay yeast character, in both the aroma and taste.

A pleasant caramel malt sweetness introduces the beer, being joined by hints of dried fruits, gentle spices and an earthy, herbal hop character. As the beer progresses, the bitterness seems to build toward a nice lingering finish.

The abbey only makes one beer, with no intention for more. The abbey is recognised as a Trappist Monastery, allowing them to use the term on the labeling. But as the beer is not brewed on their own premises, the beer is not a Trappist ale.

33cl bottle. Pours hazy amber, opaque, with fine white foam. Aroma is honey and floral, caramel. Body is average, like carbonation. Taste is moderately sweet. Final is delicate and slightly longer than usual.

Bottle bb 12/22. Slow motion gusher. Dirty amber with a frothy off white head that settles to a lasting tighter fat coat. Dried fruit aroma with butterscotch and bubblegum. Odd. But the taste is more compelling - hard to say whether it's less sweet than expected but firmish bitterness ties things together. After a while there's a hint of sour plum. Interesting.

Bottle. Murky brown color. Malt, roast laurel and nutmeg in the aroma. malty sweetish, slighly alcoholic flavor, with some spicy eatsrey notes. tasty, fairly complex brew.

From the bottle. Dark amber with a creamy head that lingers. Not an overly aromatic beer: subtle notes of apricot, mixed candy, a dash of spice. Taste is mildly bittersweet with a pleasant if very subtle interplay of flavors. You have to pay attention to this one or it’s entirely forgettable. Medium body. Dry and warming at the end with a lightly bitter bite. Overall, good.

Thuis uit een flesje. Donkere amber kleur. De smaak vind ik wat tegenvallend voor een triple van 8%. Beetje vlak.
