The apricots are sourced from environmentally-friendly and sustainable agriculture. The proportion is 300 g of fruit blended with one litre of lambic, and the soaking time is very short. Specifically, it will only take around five weeks for the lambic to extract the fragrances and flavours of the fruit. It is worthwhile to note that Fou’Foune kicks off the bottling season around the end of August. Given its success, Fou’Foune has taken up third place among the fruit beers in terms of volume, behind the traditional kriek and Rosé de Gambrinus.

Smooth, tart, heavy with apricot juice, some jamminess and hints of sourness. Lacks complexity, but quite tasty still. Loads of apricot.

2022 version on tap at Station 1280. Opaque orangeish golden pour with no head. Nose is lots of apricot, a tad dusty but intense nevertheless, also some funk. Taste is fruity, funky, somewhat sour but definitely less acidic than expected. All in all not as complex as anticipated either, but still a fine drink.

On draught at Sunset Grille, Feb 2005. Based on the qualities of my sample, I’d say it was somewhere in the 2000-2002 vintage range. Peach-apricot colored beer, with a small, fizzy white head, mostly disipating, with light lacing. Quite hazy. Aroma of light blue cheese, old funk, musty gym shoes and just an ever so slight hint of apricot essence. Flavor is very relaxed, by Cantillon standards. Sourness to start, but it’s much less aggressive and dominant than in some of their other beers. A light amount of real apricot flavor (like biting in to a dried apricot) is well integrated with the tart, base lambic. Notes of light cheese/bacteria and a bit of sweetness right near the finish. Ends quite a good deal more sour than it starts, with plenty of yeast funk. Delightful flavor throughout really showcases the lambic, with some apricot as an afterthought. Medium body, no wateriness, very low carbonation, but just enough to please the palate and keep it refreshing and light. I am definitely going to buy a bottle of this soon.

re-rate. First time i had this was over 4 years ago, and it was not a fresh bottle. this on was bottled agust 25th 2011. Boy oh boy, this is pretty close to perfect.
the light subtle peachy apricot aroma is just intoxicating. There are some great funk barnyard aromas, some great sourness. some wet hay, and quite a bit of acidity. the fruit seems to tame the tartness though. The acidity, and apricot just blend together as one, and are just unbelievable. I cant get my nose out of the glass! the finish is light, bright, refreshing. medium sour, bright tropical fruit. lingering sourness. good god, this is amazing stuff!

2015 version from tap at Moeder Lambic Fontainas. Aroma of fruits, sour citrus, apricot, wood, some Brett funk. Flavour is medium to heavy sour with a very dry finish. Body is medium. Very refreshing and nicely sour, rather fruity.

В аромате сразу много абрикосов, при этом они не спелые а чутка как будто моченые, при этом все в сене и запахом деревни. Есть кислые ассоциации сразу, немного трав, яблоки где то на отдаление. Цвет полу мутный, желтый, приятный, пенка небольшая, белая. Вкус просто замечательный, снова удивляет обилие абрикосов во вкусе. Кислота есть но она не ядерная. Снова моченость совсем небольшая, и достаточно много сена. При глотке уже травы появляются, на секунду уксусные мотивы. Но абрикосы не уходят. В целом один из лучших ламбиков что я пил.

Bottle, very fresh. But hazy golden. Massive apricot and peach, deep funk, vanilla. Amazing fruit character!
