The apricots are sourced from environmentally-friendly and sustainable agriculture. The proportion is 300 g of fruit blended with one litre of lambic, and the soaking time is very short. Specifically, it will only take around five weeks for the lambic to extract the fragrances and flavours of the fruit. It is worthwhile to note that Fou’Foune kicks off the bottling season around the end of August. Given its success, Fou’Foune has taken up third place among the fruit beers in terms of volume, behind the traditional kriek and Rosé de Gambrinus.

0,75l from bottle at the brewery. yellow hazy color, small white head. smells apricots, fragrant, jammy. Lovely smell. full body, soft carbonation. tastes apricots, jammy, vanilla, Marzipan. finishes lightly dry and lightly sour with notes of apricots, vanilla and spices. Lovely

Taster from bottle at home. 2019 cork, Season 18/19. Bottled 10 August 201(?). yellow cloudy color, small medium white head. smells of stone fruits, apricot, very fragrent, jammy, subtle vanilla. lovely smell. full body, soft carbonation. tastes stone fruits, apricots, apricot jam, vanilla, bit lactic. finishes dry and medium sour with notes of stone fruits, apricots and lactic notes. very nice one, love the apricot notes, rather on the sour side though.

On tap at Muted Horn, Berlin, shared with little Dina. Cloudy golden with an amber hue, small off-white head. Aroma is sweet apricot, apricot and peach juice. Some sour berries, acidity, but stone fruit slightly overwhelming. Flavour uncovers more sour notes, phenolic background, dry, moderate sourness, quite sharp, some vinegar. Apricot pits and flesh. Surprisingly not sweet. Lasting dry finish.

Bottle share, thank you to whomever brought this, probably Jeremy... wonderful beer. Pours a gentle orange color with a modest sandy head. Aromatic with fresh ripe apricots, very fruity and rich. Some funk. The taste is fruity sweet with plenty of the apricot and some bugs. Great balance of fruit to funk. One of the best beers of the night and as it turns out my highest rated lambic to date.

Bottle, 750 ml. Hazy yellow orange with white head. Intensive apricots on aroma and in taste. Too sour with some acidity.

2023 version. Tap at Muted Horn. Opaque golden. Nose is soft creamy apricot, natural, scones, dough. Taste is nicely balanced, long, full. Creamy apricot sorbee, apricot gelee. Light and full mouthfeel.
