Dry, clean & went down easy while cooking, but my least favourite of the Trillium I’ve tried...

Bottled 11/25/15 and drunk 3/5/16.
Big fluffy white head tops a peach-tinted golden body with very minimal haziness and strong retention on the head. Very different than the appearance on the saisons which have rapidly fizzling heads.
Light cellar notes (dry plaster, stone, dust) are quickly consumed by a dry nectarine-like ester note that in turn gives way to strong honey-like maltiness. Some cereal character enters the mix with a touch of black pepper and various other fruity esters. What it doesn’t have is any peach, bubble gum, candy, powdered sugar, heavy bread, clove or alcohol. Any more it seems trippels are just about simple the brewer can keep the beer, and this one is a grand success in that department.
The flavors follow suit, showing a prominent maltiness that is heavily honey-like, with very light bread crust and biscuits. Tight carbonation steals the show and keeps the texture creamy and the palate very engaged. Dry stone fruits and very light cellar notes from the yeast do not overwhelm nor is there any alcohol or flaw here. Wonderful sweet/dry balance adds just enough maltiness for texture and body but tapers off leaving the end quite crisp. A bit of vegetal character is the only detractor here, and it’s very light and pretty inoffensive.
Obviously not quite the wacky and charming yeast signatures of De Dolle or Allagash, but every bit as well-made, in my opinion. Really pleasantly surprised with this one.

750ml bottle pours a hazy gold with some foamy, white head. Nose has straw, candy sugar, soap, herbs, lime, a little tropical fruit. Flavor is malty and candy sweet, tropical fruit, some herb, lemon. Finishes chalky. Odd and not their best.
