The second installment of the chef collaboration series. We were happy to partner with Chef Levon Wallace from Proof on Main. Chef Wallace brought his culinary expertise and homebrewing experience to the table and came up with a incredibly refreshing and unusual brew. Pilsner malt, spelt and torrified wheat make up the grain bill, balanced with the fruity and resinous New Zealand hop Pacific Gem. Then we added galangal, a tropical herbaceous plant rhizome imparting a spicy, floral and earthy flavor and aroma. Then kaffir lime leaves were steeped to provide a perfumed citrusy aroma. Both galangal and kaffer limes leaves are used in traditional Asian cuisine. And if that wasn’t weird enough, post fermentation we added the juice of several yellow midget watermelons straight off the Proof farm. The resulting beer is fresh, flavorful and interesting.

Keg at the brewpub, 12/18/16. Hazy yellow, large creamy off-whitehead, good retention. Aroma of watermelon, earth, galangal. The taste is strong watermelon, pale malt, hints of spice. Thin-medium bodied.

On tap at the brewery. Pours a clear orange with no head. The aroma is wheat and watermelon. Thin body, watermelon, earth hop, light finish, good.

The Sampler, Brooklyn tap: Pours golden with a white head. Aroma is lime, Basil, ginger (or galangal... I can’t really tell). Taste is pretty much all of those flavors overlaying a light kolsch body. Weird, but, in some weird sense, not that bad.

Draft. Clear light golden body with a fizzy, off-white head. Aroma of mint, raw grain, lemon. The flavor is moderately sweet and lightly bitter. It finishes lightly to moderately sweet and lightly to moderately bitter. Medium body, velvety texture, soft carbonation. Unique, but overly spiced for my tastes. Lingering earthiness with peppermint and a hint of herbs and earth and floral hops. But the spices dominate everything else.

Tap at brewery. Fresh citrusy ginger aroma, Hazy pale yellow with a moderate creamy head, creamy lacing. Light floral/fruity watermelon and complex spice/ginger flavor. Light creamy body, low carbonation.

Draft. Earthy ginger aroma. Hazy golden yellow with moderate head. Earthy ginger without heat flavor initially followed by a watermelon finish. Spectacular blending. An extremely unique beer - reminded me of pickled watermelon rinds. Really enjoyed this one.
