To the eye, an intense brown beer, with bright glints and creamy foam.
On the nose, woody notes and delicate hints of pears as well as plums.
On the palate, the barrel-ageing provides bread crust, roasting and smoky aromas, enhanced by a touch of honey and vanilla.

Doesn't remind me too much of the regular blue label Chimay. Aromas are lots of raisins, plums, dates with some toffee. Flavors are somewhat similar to nose, slightly more tart than sweet. A hint of oak, maybe whiskey. Stereotypical Belgian yeast flavor in the back. Medium body with fine carbonation. Alcohol shows up at the very end. Nice beer but not as good as expected.

Bottled. Coppery brown colour with a mediumsized beigeish brown foamy head. Aroma is toffee, some caramel, alcohol, mild spicy and some whisky and vanilla notes too. Flavour is dried fruits, plum, some spices, mild nutty tones with some vanilla, wood and mild whisky tones to it. Also alcohol is somewhat evident here, but not disturbing.

Dark reddish brown, small layer of dense tan head. Smell is huge raisin, dried plums, wood, brown sugar. Quite high carbed, but soft, light body. Taste is complex and balanced. Dried fruits, little bit of brown sugar, wood, soft bitter. Barrels add nuance

Rather sweet. Not exactly my cup of tea.

375mL bottle, pours a deep dark brown with a tiny, quickly-dissipating beige head. Nose is loaded with whiskey barrels upfront, followed by gentle candi sugar, Belgian yeast, and toffee. Flavour is full of whiskey barrels upfront and dominating, giving way to a gently estery, pleasantly sweet Belgian yeast expression, toffee, and bready caramel. Complex, with lots of barrel character and sweetness on the finish. Near-flat carbonation. It's been a little long since I've had regular Chimay Bleu, but I think I do prefer this BA treatment of it. Excellent.

Donkerbruin bier met schuim wat snel wegzakt. Smaak is krachtig en zoet met iets van karamel, kandij, wat vanille en daar tussen een mooie lichte whiskey smaak die niet overheerst.

Draught at Gordon Ramsey's Caesar's Palace NJ, 8/19/21.
Mahogany with cola tints and a good clarity. Beige head atop is small, but shows decent retention, eventually fading to a ring.
Hints of caramel and milk chocolate dot a raisin and prune-heavy nose that is slowly and gently dried out via light whiskey spice/warmth. Clean and, perhaps, a bit too intensely-malty, but without any noxious alcohol heat.
Raisins galore with fig/prune/plum and all manner of dark fruits. Caramel and brown sugar sweeten things further but soft tannin helps dry as well as a very light alcohol warmth. Not particularly overt on the actual whiskey character, which is fine with me. Some more dryness may help, but it's dessert-like and somewhat decadent for sure. Clean and well-structured.
