Sue is the wine barrel-aged version of Susan (1891-1975), our grandfather's sister and the namesake of our bright, citrusy Farmstead® IPA. Aged for nearly two years, it has developed and evolved into its current manifestation: a complex, lightly tart and delicately hopped Farmstead® ale.

Bottle courtesy of Hackobock. Pours very hazy tiny burnt yellow with a frothy rocky white head that slowly dissipates while leaving lots of trace on the glass. Smell is heavy fruity and funky with crackers, grapefruit juice, pineapple, mango, passion fruit, star fruit, white grapes, freshly harvested hay, dry soil, minerals, barnyard and lemon zest. Taste is slightly sour, slightly bitter, fruity and funky. Mouthfeel is dry, tart, tiny astringent and medium bodied. Finish is slightly sour and slightly bitter with crackers, grapefruit juice, blood orange juice, pineapple, passion fruit, star fruit, hay, dry soil, barnyard, grape skins and lemon zest. Damn, this is insanely good! Hill Farmstead funky fruit bomb. Amazing!

Bottle shared in London - sourced directly from the brewery. Thanks, famliy! Pours unclear gold with a creamy, off-white head. The nose is funky and dank, with some citrusy hop (a la Susan) poking through, also hay, barnyard, tangerine. Light to medium sweet flavor with a lovely citrus character, some bitter rind, mellow tartness, pine oils. Medium bodied with average, massaging carbonation. Wonderfully well balanced to finish, with moderate farmy funk, more tangerine, lemon rind, some grassy bitterness. A nice mix farmhouse characteristics and IPA. Outstanding, masterful.

Bottle split at Jack The Sipper leaves for the FBI again tasting, massive thanks to HF pimp LKS, 14/07/15. Hazed orange amber with a decent off white covering. Nose is peach, tangy citric drizzle, apricot, on the turn melon, piss tinged, light wood. Taste comprises melon, peach, apricot, funk, tangerine, light acidic rise, wood must, lemon rinds, damp straw. Medium bodied, fine carbonation, semi drying close. Solid sour, well joined up and balanced.

Farewell Jack bottleshare at Craft Clerkenwell. Thanks once again to Leighton for sharing the Hill Farmstead goodies. Hazy golden amber beer, good cream colour head. Palate is airy and semi dry with very fine carbonation. Fluffy creamy malts, mildly bitter floralness. Touches of herb and spice. The barrelling is pretty subtle. Dry finish. Nicely integrated and very smooth.

Bottle big thanks to Leighton. It pours cloudy orange with a thick white head. The nose is soft, fresh, juicy, orange, peach, apricot, rip mango, passion fruit, vanilla, vinous notes and coconut. The taste is soft, juicy, mango, nectarine, peach, sherbet, doughy, minerals, bready malt, wood, earth, toasty grains, funk, must and vinous action with a dry finish. Medium body and moderate carbonation. Soft, well-round and pleasantly funky. Classique HF.

Bottle shared at craft beer co JackL leaving drinks. Huge thanks to Leighton. Aroma is super juicy Hop, tropical Hoo. Passion fruit. Little tangy, misgrr gem. Nice yeast character on the nose. Translucent golden orange with a big white head. Flavour is peach, pinhc of tart news, unique saison yeast like character. Apricot. Soft and balanced. Palate is soft. Airy carbonation. Velvety. So well valanced.

Bottle @ Steve_0 during my 10k tick fest. Pours a milky yellow orange appearance with an off white head. Quite herbal in the nose. Honey, lemon, sweet grain, light funk, green grass, and some twang. Very much like Orval. Lots of freshly cut grass, white wine, guava, tropical fruit, a little of dankness in the flavor. I’m surprised by the hoppiness of this beer. Pretty fun.

Batch 1. Aroma rather fruity with a lot of pineapple and tropical fruit. Some light citrus and medium light white wine notes. A slightly cheesy note with a bit of an herbal hop character. More hops as it warms. Pours a cloudy pale , straw color golden yellow with a large, thick, white head with nice retention and fairly high lacing. Light lacing. Flavor is slightly acidic with a moderately strong white wine barrel and tannins character. Some moderate tropical fruit with light citrus. Hints of cheesy funk with a medium light herbal earthiness. Medium light bitterness. Mouthfeel is medium light bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a very nice beer. I like it more as it opens up and the hops come out a bit more and the cheesiness declines.

Bottle thanks to Felipe & Mayur. Pours cloudy pale amber, large off-white head, dissipates fairly quickly, nice residual and lacing. Aroma is lemongrass, spruce, citrus, lots of Brett - reminds me of the Anchorage strain, which I love. Flavor is light sweet, light bitter, oak, Brett, fruity, citrus, a bit herbal. Medium body, creamy mouthfeel. Love it; star of the night for me.

750 ml bottle provided by Ajax, dude you are big pimping. Bottled Sept 2014. Nice clear golden yellow on the first 8 oz pour from the bottle. Light baby diaper, mild white wine notes, lemongrass and mild juicy fruits. The yeast/ Brett/ bug give it a mild funk that is more of a tartness rather then a sour note. The mouthfeel is rather dry with a nice lingering tartness. Refreshing. Jeez, a wine barrel brew done to near perfection.
