750 ml bottle into tulip glass, bottled in 6/2019. Pours lightly hazy pale golden yellow color with a 1 finger fairly dense and fluffy white head with very poor retention, that reduces to nothing nearly instantly. No lacing, some clinging bubbles and streaming carbonation. Aromas of big juicy/tart/tangy limes, citrus peel/zest, watermelon, cucumber, fruit skin/seed, lemon, peach, pear, pineapple, apricot, passion fruit, melon, red/green apple, white grape/wine, oak, sea salt, hay, straw, grass, wheat, cracker, and white bread; with light notes of chili pepper, smoke, leathery/musty/lacto funk, white wine vinegar, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of watermelon, lime, fruity/funky/acidic yeast, salt, moderate pale/wheat malts, and light Ancho chili notes; with big strength. Taste of big juicy/tart/tangy limes, citrus peel/zest, watermelon, cucumber, fruit skin/seed, lemon, peach, pear, pineapple, apricot, passion fruit, melon, red/green apple, white grape/wine, oak, sea salt, hay, straw, grass, wheat, cracker, and white bread; with light notes of chili pepper, smoke, leathery/musty/lacto funk, white wine vinegar, and yeast/oak earthiness. Light-moderate fruity/lactic tartness, fruit tang; light sourness, zesty bitterness, and chili/Brett/oak tannin spiciness on the finish. Lingering notes of sour/tart/tangy limes, citrus peel/zest, watermelon, cucumber, fruit skin/seed, lemon, peach, pear, pineapple, apricot, passion fruit, melon, red/green apple, white grape/wine, oak, sea salt, hay, straw, grass, wheat, cracker, white bread, light pepper/leathery/musty/lacto funk/vinegar, and yeast/oak earthiness on the finish for a while. Fantastic complexity, robustness, and balance of watermelon, lime, fruity/funky/acidic yeast, salt, moderate pale/wheat malts, and light Ancho chili flavors; with a great malt/tart/sourness, and tangy fruit balance; with minimal puckering flavors after the finish. Fairly crisp/clean finishing. Light-moderate increasing dryness from lingering tart/sourness, tangy fruit, and carbonation. Medium-high carbonation and light-medium body; with a very smooth, and moderately creamy, grainy, acidic, tangy, tannic, saline balanced mouthfeel that is great. Minimal warming 7.3% or chili heat after the finish. Overall this is a fantastic fruited sour/wind ale. All around fantastic complexity, robustness, and balance of watermelon, lime, fruity/funky/acidic yeast, salt, moderate pale/wheat malts, and light Ancho chili flavors; very smooth and fairly crisp/clean to drink with the moderately acidic/tangy/tannic/drying finish; not overly lactic/salty. Fantastic balance of big juicy fruits, and Brett/bacteria complexity; great oak foeder presence, and nice pale/wheat malts against acidity. Zero residual sweetness with crisp acidic/tangy dryness. A highly enjoyable offering, and outstanding style example as expected. Was hoping for more Ancho Chili presence, though.
