In 2018, our friends at 7 Monks lent us a tequila barrel that previously held bourbon. We blended our sour ale into the barrel with a ton of guava and a decent smack of Mosaic hops. Turns out it was one of the best beers we've ever made, but we were sad that we only got 3 kegs from the batch. Fast forward to 2019, and we decided that we'd try to recreate it. This is a blend of 1 bourbon barrel and 4 tequila barrels, and the same ratio of hops and fruit as 2018. Holy cow, it does not disappoint!

750 ml bottle into tulip glass, bottled in 5/2019. Pours slightly hazy pale golden yellow color with a 2-3 finger fairly dense and fluffy white head with fantastic retention, that reduces to a nice cap that lasts. Thick foamy lacing clings on the glass, with a fair amount of streaming carbonation. Fantastic appearance. Aromas of huge juicy/tart/tangy pink guava, fruit skin/seeds, lemon, lime, peach, pear, pineapple, apricot, passion fruit, papaya, mango, honeydew melon, blueberry, citrus peel/zest, tequila, toasted oak, peppercorn, hay, straw, grass, agave, wheat, cracker, and white bread dough; with lighter notes of bourbon, oaken vanilla, leathery/musty/lacto funk, white wine vinegar, and yeast/oak earthiness. Fantastic aromas with amazing balance and complexity of pink guava, citrus/fruity/tropical hops, fruity/funky/acidic/spicy yeast, tequila barrels, and pale/wheat malt notes; with big strength. Taste of huge juicy/tart/tangy pink guava, fruit skin/seeds, lemon, lime, peach, pear, pineapple, apricot, passion fruit, papaya, mango, honeydew melon, blueberry, citrus peel/zest, tequila, toasted oak, peppercorn, hay, straw, grass, agave, wheat, cracker, and white bread dough; with lighter notes of bourbon, oaken vanilla, leathery/musty/lacto funk, white wine vinegar, and yeast/oak earthiness. Light-moderate fruity/lactic tart/sourness, fruit tang, and yeast/oak tannin spiciness on the finish. Lingering notes of sour/tart/tangy pink guava, fruit skin/seeds, lemon, lime, peach, pear, pineapple, apricot, passion fruit, papaya, mango, honeydew melon, blueberry, citrus peel/zest, tequila, toasted oak, peppercorn, hay, straw, grass, agave, wheat, cracker, white bread dough, light leather/funk/vinegar, and yeast/oak earthiness on the finish for a good bit. Amazing complexity, robustness, and balance of pink guava, citrus/fruity/tropical hops, fruity/funky/acidic/spicy yeast, tequila barrels, and pale/wheat malt flavors; with a fantastic malt/tart/sourness and tangy fruit balance; with no puckering/astringent flavors after the finish. Fairly crisp finishing. Light-moderate increasing dryness from lingering tart/sourness and tangy fruit. Medium-plus carbonation and medium body; with a very smooth, moderately creamy/grainy, and acidic/tangy/tannic balanced mouthfeel that is fantastic. Minimal warming alcohol for 7.4%. Overall this is an amazing fruited sour/wild ale! All around amazing complexity, robustness, and balance of pink guava, citrus/fruity/tropical hops, fruity/funky/acidic/spicy yeast, tequila barrels, and pale/wheat malt flavors; very smooth and easy to drink for the ABV, with the mellowly acidic/tangy/tannic/drying finish. Nicely soft feel for the style, and not overly lactic. Amazing balance of super juicy/vibrant Guava/Mosaic hop and Brett/Bacteria complexity; with great Tequila barrel presence and pale/wheat malts against acidity. Light residual sweetness with lingering acidic/tangy drying. A highly enjoyable offering, and amazing top tier style example. One of their best beers I've had. Loved the last one they put in a Tequila Barrel - Facilitated Adaptation; this is even better than that.
