16 ounce can into pint glass, canned on 11/29/2018. Pours moderately hazy/cloudy pale golden yellow color with a 2 finger fairly dense and fluffy white head with fantastic retention, that reduces to a nice cap that lasts. Thick foamy lacing clings on the glass, with a moderate amount of streaming carbonation retaining the cap. Fantastic appearance. Aromas of big lemon, lime, orange peel, peach, pear, melon, red apple, coriander, cardamom, peppercorn, clove, wheat, cracker, white bread dough, and lightly toasted biscuit; with lighter notes of banana, bubblegum, herbal, floral, grass, and yeast earthiness. Damn nice aromas with great balance and complexity of fruity/spicy yeast, spices, and pale/wheat malt notes; with great strength. Taste of big lemon, lime, orange peel, peach, pear, melon, red apple, coriander, cardamom, peppercorn, clove, wheat, cracker, white bread dough, and lightly toasted biscuit; with lighter notes of banana, bubblegum, herbal, floral, grass, and yeast earthiness. Light-moderate peppery yeast spiciness; herbal, floral, grassy bitterness; and slight wheat tang/tartness on the finish. Lingering notes of lemon, lime, orange peel, peach, pear, melon, red apple, coriander, cardamom, peppercorn, clove, wheat, cracker, white bread dough, toasted biscuit, light banana/bubblegum, herbal, floral, grass, and yeast earthiness on the finish for a good bit. Great complexity, robustness, and balance of fruity/spicy yeast, spices, and pale/wheat malt flavors; with an awesome malt/bitter/spiciness balance, and no cloying/astringent flavors after the finish. Moderate increasing dryness from lingering bitter/spiciness and carbonation. Medium-high carbonation and medium body; with a very smooth, creamy/bready/grainy, and fairly crisp/sticky mouthfeel that is great. Zero warming alcohol as expected of 5%. Overall this is an excellent witbier. All around great complexity, robustness, and balance of fruity/spicy yeast, spices, and pale/wheat malt flavors; very smooth, crisp, and refreshing to drink with the modestly bitter/spicy/drying finish. Very flavorful and not watery for the ABV. erfectly balanced Belgian wit yeast and spice complexity; with a good sized pale/wheat malt backbone for the ABV. Minimal residual sweetness with crisp dryness. A very enjoyable offering, and spot on classic tasting style example. Nothing really holiday related about it on the spices.
