Mills’ first spontaneously fermented beer. The wort was produced using the traditional turbid mash method, with a grist of malted barley, raw wheat and rye. It was left in the coolship overnight to be inocculated with wild yeast and bacteria before being transferred to wood.

From tap at Wild Festival Groningen 2019. Blend #2. Aroma is fruity with oak, some funk. Notes of apples and grapes. Tart flavour, dry finish, medium sour. Body is medium. Nice stuff. ****** From tap at Foeders, Amsterdam. Unblended Today. Nicely puckering sour. Funky with citrus, some hay, lemon. Brings the sourness, complexity as well. Great.

Large format bottle shared at Alex's Hogmanay Party thanks to David R.
Appearance - cloudy golden amber with a thin beige head.
Nose - balsamic, lanolin, wood, sherry and some citrus.
Taste - more balsamic and general vinegar, zest and wood.
Palate - long lean mouthfeel, tart and great linger.
Overall - lovely stuff! Last beer of the year, perhaps and one of the best.
