Follow our journey as we flavor it out towards the perfect Stout. Step by step, beer by beer, on and on. Forever! This is Fudge. A big imperial stout brewed with vanilla and cocoa to really pack that fudge-punch. Candy!
The short story is that Fudge is one of two inaugural stouts that was first brewed for us at Dugges under the Twelve Percent beer project in the USA. We’ve done a bunch of stouts so it just seemed the right thing to do while introducing our first US brewed stouts to the public. We loved Fudge so much we decided to brew it again, at our own place in Landvetter, Sweden. It is the best Fudge stout we’ve ever done… (Ok, we’ve only done one, but still.)

Fat på Örebrewfest 2019, session 2. Backlog. Massiv doft av saltkaramell/kola-havssalt! Smaken bär inte upp riktigt lika väl, men gott hur som.

16 ounce can into snifter; no can dating, but was just released. Pours dense opaque dark brown/black color with a 2 finger dense and creamy khaki head with amazing retention, that reduces to a large cap that lasts. Thick soapy lacing clings on the glass, with a fair amount of streaming carbonation. Amazing appearance. Aromas of big milk/dark chocolate, cocoa, coffee, caramel, vanilla, cream, toffee, brown sugar, roasted nuts, fudge, toasted biscuit, spicy rye, and dark/brown bread/crust; with lighter notes of molasses, licorice, raisin, prune, fig, date, smoke, charcoal, leather, tobacco, wood, herbal, grass, pepper, pine, and yeast/roast/toasted earthiness. Slight booze in the aromas as it warms, but not overwhelming. Damn nice aromas with great balance and complexity of dark/roast/rye/bready malts, cocoa, vanilla, and light-moderate fruity yeast/earthy hop notes; with great strength. Taste of huge milk/dark chocolate, cocoa, coffee, caramel, vanilla, cream, toffee, brown sugar, roasted nuts, fudge, toasted biscuit, spicy rye, and dark/brown bread/crust; with lighter notes of molasses, licorice, raisin, prune, fig, date, smoke, charcoal, leather, tobacco, wood, herbal, grass, pepper, pine, and yeast/roast/toasted earthiness. Light pine, herbal, grassy, woody, peppery hop; and roast/charcoal bitterness on the finish. Lingering notes of milk/dark chocolate, cocoa, coffee, caramel, vanilla, cream, toffee, brown sugar, roasted nuts, fudge, toasted biscuit, spicy rye, dark/brown bread/crust, molasses, licorice, dark fruit, smoke, charcoal, leather, tobacco, wood, herbal, grass, pepper, pine, and yeast/roast/toasted earthiness on the finish for a while. Amazing complexity, robustness, and balance of dark/roast/rye/bready malts, cocoa, vanilla, and light-moderate fruity yeast/earthy hop flavors; with an awesome roast/hop bitter/sweet balance; and no cloying, acrid, astringent flavors after the finish. Lightly increasing dryness from lingering hop/char bitterness. Medium carbonation and full body; with a very smooth, creamy/silky/velvety/bready, and fairly sticky/chalky mouthfeel that is fantastic. Mild increasing warmth of 12%, with no booziness lingering after the finish. Overall this is an amazing flavored dessert imperial stout! All around incredible complexity, robustness, and balance of dark/roast/rye/bready malts, cocoa, vanilla, and light-moderate fruity yeast/earthy hop flavors; very smooth and dangerously easy to sip on for the huge ABV, with the mellowly bitter/drying finish. Nicely soft feel, not overly bitter/charred. Insanely rich rye/oats/malt complexity, with cocoa/vanilla flavors; great earthy hop presence/balance against sweetness, and restrained fruity yeast notes. A highly amazing offering, and top tier style example. Perfectly balanced between all flavors.
