750 ml bottle into tulip glass, bottled in 12/2018. Pours fairly hazy medium golden yellow color with a 2 finger dense and creamy white head with fantastic retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings on the glass, with a fair amount of streaming carbonation. Fantastic appearance. Aromas of big juicy/tart/tangy peaches, fruit skin/pits, apricot, lemon, lime, orange, grapefruit, citrus zest, pear, pineapple, mango, melon, red/green apple, white grape/wine, oak, hay, straw, grass, wheat, cracker, and white bread; with lighter notes of peppercorn, leathery/musty/lacto funk, white wine vinegar, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of fruity/funky/acidic yeast, peaches, wine barrels, and moderate pale/wheat malt notes; with great strength. Taste of big juicy/tart/tangy peaches, fruit skin/pits, apricot, lemon, lime, orange, grapefruit, citrus zest, pear, pineapple, mango, melon, red/green apple, white grape/wine, oak, hay, straw, grass, wheat, cracker, and white bread; with lighter notes of oaken vanilla, peppercorn, leathery/musty/lacto funk, white wine vinegar, and yeast/oak earthiness. Light-moderate fruity/lactic tartness, fruit/wine tang; and light yeast/oak tannin spiciness on the finish. Lingering notes of juicy/tart/tangy peaches, fruit skin/pits, apricot, lemon, lime, orange, grapefruit, citrus zest, pear, pineapple, mango, melon, red/green apple, white grape/wine, oak, hay, straw, grass, wheat, cracker, white bread, peppercorn, light leather/funk/vinegar, and yeast/oak earthiness on the finish for a while. Incredible complexity, robustness, and balance of fruity/funky/acidic yeast, peaches, wine barrels, and moderate pale/wheat malt flavors; with a fantastic malt/tartness and fruit/wing tang balance; with no puckering flavors after the finish. Light-moderate increasing dryness from lingering tartness, fruit/wine tang, and carbonation. Medium-plus carbonation and medium body; with a very smooth, moderately bready/grainy/acidic/tangy, and fairly crisp/tannic balanced mouthfeel that is fantastic. Zero warming alcohol for 7%. Overall this is an incredible fruited sour/wild ale. All around fantastic complexity, robustness, and balance of fruity/funky/acidic yeast, peaches, wine barrels, and moderate pale/wheat malt flavors; very smooth, easy, and fairly crisp to drink; with the modestly acidic/tangy/tannic/drying finish, not overly lactic. Amazing balance of juicy peaches and Brett/bacteria complexity; with great wine barrel presence, and pale/wheat malts against acidity. A highly enjoyable offering, and amazing style example. Best sour I've had from them so far.
