This is how a beer from our backyard in Orange County should taste: refreshing, crisp and original. Orchard Wit is a tart wheat beer, brewed with orange zest and coriander, and aged in an oak foeder for several months. It’s designed to showcase the culture of our farmhouse-style brewery through maturation in oak and fermentation with several yeast strains, namely Bavarian Wit, Belgian Wit and French Saison yeast, and our house souring culture. It’s a combination that’s fresh with subtle complexity, balancing the classic, spiced and fruity characteristics of a Belgian-style wit with the soft - and wild - touch from oak.

Phew. It’s like chewing on a fruit stem. I love it.

330 mL bottle, shared by Tim! Pours a hazy, yellow color, with a fleeting head. The nose is orange peel, lemon juice, light cloves, and sawdust. Sweet and sugary, with a bracing sour finish. Simple and tasty.

Thin off white head quickly left a spotty cover on an unclear, finely carbonated pale golden body. Citrus, funky, orange & yeast aroma. Medium bodied, ultra sharp on the tongue with a dry clean back. Bitter lemon, tangy, hay, yeast, vinous & faint woody tastes with a long sour finish.

Bottle, 0.375l. Aroma of cereals, grape skin, yeast, wine and barnyard. Pours cloudy dark golden color with totally diminishing off-white head and average sparkling appearance. Taste starts light sweet and sour grainy and citrusy, following is vinous, lactic, woody and funky, while mouthfeel is crisp and dry. Medium body, slick texture and lively carbonation in palate. Paradise orchard...
