This is how a beer from our backyard in Orange County should taste: refreshing, crisp and original. Orchard Wit is a tart wheat beer, brewed with orange zest and coriander, and aged in an oak foeder for several months. It’s designed to showcase the culture of our farmhouse-style brewery through maturation in oak and fermentation with several yeast strains, namely Bavarian Wit, Belgian Wit and French Saison yeast, and our house souring culture. It’s a combination that’s fresh with subtle complexity, balancing the classic, spiced and fruity characteristics of a Belgian-style wit with the soft - and wild - touch from oak.

Bottle thanks to William. Pours a cloudy orange with small white head that lasts. The aroma is yeast, funk, oak. Slick body, apple skin, lemon, oak, wheat, nice tartness, light dry finish, very good.

This brew is a hazy golden color with a medium white head that dissipates steadily to a film. Stringy lacing. Funky, fruity aroma with oak and wheat notes. Light-bodied with flavors of citrus, wheat, oak, coriander and bready malt. The finish is mildly tart and funky with a fruity wheat aftertaste. Above average overall.

Aroma is slightly dry sour-ish floral, fruit salt, old hay, soda powder, flowers, grass, oak, minerals, sorrel, fruit stones, weeds, citrus acid, light malts. Taste is slightly dry sour-ish mineraly, soda powder, fruit salt, citrus acid, flowers, hay, minerals, grass, citrus, sorrel, unripe berries, light malts. Medium bitterness, slightly dry sour-ish mineraly mouthfeel. Nice taste...

Draft pour at B Side. Poured a hazy golden yellow color with a small slightly off-white head. Aroma was tartness, more tartness than I expected, but still a touch subtle. Light sweetness and mild tartness. Touch of vanilla and oak wood. Mild acid finish. Decent.

$4.99 bottle, Beer Run. Pours clear gold with a soft off-white head. Aroma is tart fruit: lemon/orange, coriander, grasses, wheat. Flavor is light funky wheat, tart citrus, oak, yeast, vinegar. Not a ton of flavor, and it doesn't linger more than a few seconds.

375 ml bottle into tulip glass, bottled on 12/19/2017. Bit of a gusher upon opening, but not instantly. Pours lightly hazy/cloudy pale golden yellow color with a 1-2 finger dense white head with great retention, that reduces to a thin cap that lingers. Light spotty soapy lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of big tart lemon, lime, peach, pear, melon, red/green apple, coriander, orange peel, white wine, peppercorn, hay, straw, grass, oak, wheat, cracker, and white bread dough; with light notes of leathery/musty funk, white wine vinegar, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of fruity/funky/spicy/light acidic yeast, spices, oak, and pale/wheat malt notes; with great strength. Taste of big tart lemon, lime, peach, pear, melon, red/green apple, coriander, orange peel, white wine, peppercorn, hay, straw, grass, oak, wheat, cracker, and white bread dough; with light notes of leathery/musty funk, white wine vinegar, and yeast/oak earthiness. Light-moderate lactic tartness, yeast/oak tannin spiciness, and light wheat tang on the finish. Lingering notes of tart lemon, lime, peach, pear, melon, red/green apple, coriander, orange peel, white wine, peppercorn, hay, straw, grass, oak, wheat, cracker, white bread dough, light funk/vinegar, and yeast/oak earthiness on the finish for a while. Awesome complexity, robustness, and balance of fruity/funky/spicy/light acidic yeast, spices, oak, and pale/wheat malt flavors; with an awesome malt/tart/spiciness balance, and zero puckering/astringent flavors after the finish. Light-moderate increasing dryness from tart/spiciness and carbonation. Medium-high carbonation and medium body; with a very smooth, moderately creamy/bready/acidic, fairly crisp, and lightly sticky/tangy/tannic balanced mouthfeel that is fantastic. Zero warming alcohol as expected of 5.7%. Overall this is an outstanding sour/wild witbier! All around awesome complexity, robustness, and balance of fruity/funky/spicy/light acidic yeast, spices, oak, and pale/wheat malt flavors; very smooth, crisp, and refreshing to drink with the modestely acidic/spicy/drying finish, never overly lactic. Really awesome balance of Brett/Lacto/Wit yeast complexity, spices, oak, and pale/wheat malts. A highly enjoyable offering, and spot on base style example.
