keer gedistilleerd in zogenoemde koperen ‘Pot Stills’ en moet het daarna nog minimaal twee jaar rijpen in barriques, traditioneel gemaakt van Franse Limousin of Tonçais eiken. Om de bijzondere geur en smaak van de cognac optimaal tot zijn recht te laten komen zijn voor deze batch 100 procent cognac Limousin barriques gebruikt.
Batch 36 presenteert zich met een fijn geparelde schuimkraag. De kleur is een stuk donkerder dan de normale Quadrupel.
In de geur is direct een zeer subtiele en verfijnde cognactoets herkenbaar met hierin druiven, gedroogd fruit, amandel en nootmuskaat.
De smaak is te omschrijven als warm en fluweelzacht. De bitterheid is lager dan bij de normale Quadrupel en is meer naar de achtergrond verdrongen. De ondertoon van het bier is prettig zoet, zeker ook door het hoge alcoholgehalte wat tot bijna 12 procent is opgelopen. In de nasmaak komen de moutige karamel en ester tonen terug, samen met het eikenhout, en natuurlijk de cognac.
Deze batch Quadrupel Oak Aged is in diverse opzichten uniek te noemen.

375 ml bottle. Pours a bright mahogany color with light head. Aromas of oak, fruity cognac, dried fruit and toasted malts. Flavors of oak, cognac, dried orange, a bit of candi sugar, and toasted malts. Soft and a bit oxidized but still very good.

Fles gedronken tijdens proeverijtje met Tomhendriksen, Benzai, Roelzie en Keukeman. Robijnrood, licht troebel bier met weinig schuim. Heel licht aroma van vanille. Smaak is nootachtig met een hint van cognac. Nasmaak is licht pittig.

Fles thuis gedeeld met Inoven, LiekevdV, Benzai, Keukeman en Roelzie. Het is een helder bruin bier met weinig schuim. Het heeft een aroma van cognac en hout. De smaak is vol, zacht zoet, warm met duidelijke cognac tonen.

Pours darker brown, clear. No head. Scent is rather umami-based, mild cognac but down-watered by the beer. Taste is very umami, cognac-light , oak, Spirit-forward but not at all boozy. Rather thin body, lower carbo. Very aromatic. Not bad at all, just lacks a bit of balance (basebeer). Great advertisement for cognac though.

The 36th one in this endless series of beautiful quads (and the best La Trappe has to offer as far as I am concerned), aged purely in cognac barrels. Bottle at ‘t Molenhof in Oostvleteren, thanks tderoeck for sharing. Moussy, pale yellowish-beige, dense and stable head, initially clear copper-red caramel brown robe with protein flakes floating throughout, hazy with sediment. Aroma of caramel candy, lots of vanilla-breathing oak wood, pronounced cognac indeed, hazelnut oil, chewing gum, wet leather somewhere, elderberry syrup, amaretto, fig jam, banana, old brown honey, red apple. Sweet onset, brown-sugary with fruity aspects of candied dates, banana, pear jam and Sultana raisin, medium carbonated with full body; caramelly, toffeeish and lightly brown-bready maltiness, sweet with a strong tannic oak effect (including that retronasal vanilla aroma) and some soft floral hop bitterishness. Pronounced, boozy, peppery brandy flavour in the finish, but caramelly sweetness remains, and absorbs part of the heat. Quite boozy still, I think I prefer the non-liquor ones in this series, but arguably still on the young side and probably prone to further improvement with extended cellar ageing.

Little clear red brown beer, lots of protein flakes floating around under a small creamy off-white head, unstable, non adhesive. Aroma: lots of banana, alcohol, very oxidized, dried fruits, yeasty character. MF: ok carbon, medium body. Taste: lots and lots of alcohol up front, caramel, more alcohol, very boozy, ripe banana, some vanilla. Aftertaste: pretty boozy, lots of alcohol, milk chocolate, a little bitter, a bit sweet, calvados, more alcohol.

Reddish brown, some light white foam on the edges. Smells sweet, bit woody, some cognac, raisins. Relatively light body, still some good carbonation in the mouth. Taste is bitter and sweet, plenty of dried fruits, lots of wood, and some cognac.

Hazy brown with quite a lot of gunk in the bottle. Aroma and flavour have loads of sweet fruity cognac notes. Pleasant woody dryness. Rich texture. In the aftertaste the banana sweetness of the base beer comes through but is a good match.

Hazy orange to amber colour, medium sized dense ecru off-white head; aroma of cognac, vanilla, dried cherry bonbon, some burnt plum jam, biscuity notes and some spicy alcohol; taste has the same notes as can be felt in the aroma with more intense alcoholic spiciness; excellent beer
