After being double barrel-aged in spent Derivation barrels over the course of more than 4 years and being infused with Michigan Balaton Cherries twice, we are happy to have Blend #3 ready to share with you.
Black & Wild began as a challenge to produce a black sour that I enjoyed. For me, black wild ales and wild ales over 10% ABV often strike my palate with too much force. Black & Wild was my challenge to change things up, not only for me, but for our Side Project lineup of beers. With a very soft, but black malt bill, aged in spent bourbon barrels that housed Derivation (double barrel-aged for more than 4 years) and re-fermented on Balaton Cherries twice, Black & Wild Blend #3 provides a rich, chocolatey palate with notes of vanilla and bourbon and finishes with tart cherries. On tap at Side Project Cellar. Black with tan head. Dark fruit, berries, some roastiness, cocoa, oak bourbon, nice smooth texture. Medium+ bodied. Drink nicely.
