A series of mixed culture sours, fermented in a selection of oak barrels and blended to balance acidity prior to introducing fruit. Composition 5 is a
blend of golden sours, fermented in oak puncheons, then refermented on black raspberry, and bottle conditioned with champagne yeast. Please keep cool, pour carefully and expect some sediment.

On tap at Other Half Domino Park. Pours very dark red. Intense berry, tart, raspberry, blackcurrant, blackberry, sharp sweet balsamic, bright raspberry, lingering passionfruit gooseberry white wine kinda notes, bright sweet and tart. Medium bodied, fairly low carbonation. Excellent.

Bottle pours out deep purple topped with a small head. Nose is big jammy berries tart notes and a vanilla cream. Tart funky barrel plenty sweet berries wow great.
