初のコラボレーション（京都醸造と）にして初のサワービール「燦々京鳥（さんさんきょうちょう）」に続いて、第二弾となるビールが発売しました。
デュッベルの麦汁を乳酸発酵させた後ベルギー酵母で発酵させたダークなサワーエール。
フランス産ホップ「バーブルージュ」の赤果実を思わせる香りや、サワー特有のフレッシュなりんごを思わせる香り、しっかりとした酸味を感じながらもジューシーで優しい口当たり。
何杯でも飲める味わいに仕上がりました。
過去最大級の評価を得たデュッベルをサワリング。
そして仕込みの日が大山初冠雪の日、祝福されているかのように感じました。
そんな思いから京都醸造に敬意を表して今回も漢字四文字で「初志冠雪（しょしかんせつ）」とネーミングしました。

Fantastic. The first version was great, with KBC. This is just as good, solo. Apparently there’s packed meaning in the kanji/name...

Dubbel oud bruin hybrid feel. Not got the bruin fruitiness but got the vinegar part. Background has the dubbel ovaltine maltiness. Interesting.

Clear copper with a decent white head. Soured cherry and woody notes with a touch of plum. Original review text: Deep cloudy brown. Soured dark plum and cherry notes. Soured plum, some earthy notes and fairly clean finish.
