Helles, delicate and refined, are a brewer’s challenge: how to make a vivid beer of elegance with the simplest of tools? In turning the dials down across the board, we find whispered flavours normally too hushed to be heard. Each quiet voice is a filament, both fine and bright, and fleeting, as if before you can put a finger on, it rises away. What’s left are ripples in the water: a pinch of spice, the brisk warmth of a fresh loaf, and a faint memory of smoke, like embers still glowing in the morning, their smell carried on the wind.

12oz shared with Ryan. Appearance: hazy golden with a white head. Aroma: hoppy, some raw water and grass, crispy. Taste: along the same lines. Overall: refreshing and pleasant for a thirsty day.

(Can) hazy, bright fluorescent orange colour with a small white head; aroma of grain, jam, smoke; slightly creamy palate; rich, bit smoky flavour with a long, medium bitter finish

Tap at Takanoya. A new helles version according to the brewer who sat next to me as I drank it. Hazy, deep gold with lace. Lioght smoke in the nose, crisp bready malt, a hint of citrus. Flavor gives a bit more smoke, umami, not bacon so much as light katsuo flakes, bread. Very crisp and clean. Awesome balance.
