Fouder aged classic Belgian style Saison

Our first release from our horizontal French oak fouder. The beer began life as a Vienna and Spelt focused Saison with a medium bitterness and a strong Saaz nose. The beer was aged over several months in the fouder with a blend of Brett for several months, then bottle conditioned for several more. Look for aromas and flavors of peach, apricot and pepper with a light funk along with an effervescent, dry mouthfeel.

500 mL bottle pour, split at Special Brews. Finally trying this after staring at it numerous times at this same bottle shop. Love all the Matchless hops, so it's always fun to see them put out something like this one. Pours a pale golden color with a rocky head. Funky wild yeast aroma, some grains. Flavor is a bold funk as well. A bit dry. Some spice, and a cool finish. Serious funk going on. Extremely unique. Plenty of oak character comes through. Very good stuff.

Lightly hazy golden orange with a white foamy head. Light floral, citrus, funk, must notes. Brett exists but is restrained. Medium bodied. Finish has lingering musty and fruity notes. Nice.

Hazy, nose has brett, light pepper. Really low bitterness, peppery, touch of brett and associated. Quality.

On tap at Matchless, pours a hazy blonde with a small white head. Aroma brings out lots of oaky wood, some wild yeast character and a touch of farmhouse character. Flavour is very complex, with lots of oak, wild yeast character and farmhouse yeast. They've utilized the yeast perfectly here and likewise the foundres. Fantastic.
