An organic northwest sour ale. This beer is fermented spontaneously on the Logsdon Farm, so all yeast and lactobacillus are naturally occurring from the surrounding orchards and forests of the area. Malt sweetness and flavorful hop additions give way to subtle layers of acidity and mouthwatering tartness. This beer represents our transition to wild ales; our conversion to the wild side.

Capped 750 from Bine & Vine. Pours translucent gold with a transient white head. Aroma is mildly sour pale stone fruit. Deep inhale required to get much. Near med body. Flavor seems apricot in a moderately sour, perhaps slightly Pedio, way. Flavors arenβt strong. Finishes pedio, fruity, somewhat bitter. Definitely dry. Creamy cheese brings out a bit of spice!
