Three year old sample: Hazy yellow colour. Aroma is yeasty, with apples, sweet gale, oregano and peach. Sweet, flowery, herbal body. Young, this beer was so yeasty as to be a cross between a witbier and an abbey dubbel. Now, the yeast has dropped out and the herbs are really showing themselves. It has emerged into the historical re-creation it was always intended to be. I like it much more at this age. Too bad there are hardly any bottles left (I have but one). (rating when young: 2.7)
